Founded in June 1996 by entrepreneur Anthony Zolezzi, the Bubba Gump Shrimp Company is inspired by the fictional restaurant from the 1994 movie "Forrest Gump", named after the eponymous fictional character and his friend Benjamin Buford 'Bubba' Blue. Capturing the magic that made "Forrest Gump" an American movie classic, the real-life Bubba Gump Shrimp Company serves scratch-made, southern-style comfort dishes plucked straight off the silver screen.
Ambience at Bubba Gump Shrimp Company exudes a seafood shack vibe. Warm lights illuminate the long wooden tables and benches, with functional diner-style cushioned chairs in red and blue. The restaurant overlooks the broadwalk and offers a good view. They aptly have decor and merchandise related to "Forrest Gump", from movie memorabilia, to boxes of chocolates imprinted with the famed 'life is like a box of chocolates' quote, to their mascot Shrimp Louie.
Service at Bubba Gump Shrimp Company is passable. During our visit, staff were friendly and polite, albeit seemingly detached, requiring us to repeat orders and requests several times. While the kitchen fulfils orders quickly, cleaning up seems to be done leisurely. At some point, our waitress disappeared for a long while, resulting in our dining duration being stretched an additional 40 minutes. I like that each table has a pair of signs to signal the service staff.
Food at Bubba Gump Shrimp Company is American cuisine, focused on Southern style seafood dishes, with names inspired by the movie. Shrimp is the primary focus, making an appearance in the majority of dishes, and the range of seafood is nicely fresh. Dishes are well-executed, and I like the combination of comfort food with a view. Portions are medium to large for individuals. Prices command a premium, budget about USD $52 / SGD $71 per person.

The Server Signalling Sign at each table enables customers to attract the attention of staff. The "Run Forrest Run" sign in blue means everything is going well, while the "Stop Forrest Stop" sign in red means you require assistance. Staff are pretty observant, coming quickly when they see the red "Stop Forrest Stop" sign.

The Iced Tea (USD $3.99) here is available in sweetened or unsweetened options, I got the latter. Served with a lemon wedge, the thin black tea has an earthy fruity tangy sour zesty flavour. Good!

The Beer Galveston Island Tiki Wheat (USD $12.25) is an American pale wheat beer, brewed by Galveston Island Brewing in Galveston, Texas, United States Of America. It has a hazy red amber colour, with aromas and tastes of wheat, orange, coriander, and caramel. The body is thin, crisp, and dry, with grainy bready sour bitter fruity sweet vegetal flavour, and a lingering finish.

The Blackened Redfish (USD $27.99) features a large deboned fillet of spice blackened redfish, with a soft moist flaky texture and smoky sweet salty savoury herbal spice flavour, nicely addictive. Paired with fresh partially deshelled prawns / shrimp, gently grilled, which are tender bouncy with smoky savoury salty sweet flavour. Served with crunchy steamed garlic broccoli florets carrying vegetal sweet spice flavour; fluffy soft moist steamed white rice with grainy sweet flavour; and a juicy tropical pico de gallo / salsa fresca (made with diced pineapple, white onion, tomato, serrano peppers, salt, lime juice, and cilantro) with vegetal sour fruity sweet flavour that is so refreshing. Highly recommended!

The huge Key Lime Pie (USD $10.99) is topped with whipped cream and a slice of lime. Served chilled, this classic dessert pie has a soft custardy wobbly grainy texture, with bright zesty tangy sour fruity sweet biscuity flavour that makes you crave more. Highly recommended!
