Founded in 2016 in Kobe, Hyogo prefecture, Kansai region, Japan, Enishi is a casual ramen noodles eatery that only offer 2 items on their menu, yet managed to garner the Michelin Bib Gourmand recognition in 2016 for their consistency and quality. True to form, Enishi is styled like a quick casual hole-in-the-wall eatery, and they only serve a limited number of bowls each day, about a 100 bowls or so.
Ambience at Enishi is functional and cramped. The brightly lit but small space is dominated by the open kitchen, and there are only 10 seats for diners, arrayed around a counter. This high counter actually doesn't allow you to see the kitchen action, but it serves to offer some privacy as you stare straight ahead and ignore diners beside you while you eat.
Service at Enishi is quick and efficient. Staff are quick to greet and seats guests, and the kitchen churns out bowl after bowl really fast. Staff also clean up quickly when diners leave. Don't expect much interaction or product knowledge though, as the menu has clear and helpful descriptions with pictures of the only 2 dishes. Note there tends to be a short queue during peak periods.
Food at Enishi is Japanese cuisine, focused specifically on dashi broth ramen noodles, and the Japanese version of Dan Dan Noodles / Tan Tan Mien. Quality is consistently good in execution, and taste is delicious, not robust, but pleasant and soulful, good comfort food. Portions are sized for individuals. Prices are reasonable for a casual speciality restaurant, budget about SGD $22 per person.

The Signature Dashi Ramen (SGD $19.80) features a clear and light dashi broth infused with yuzu, resulting in a pleasant earthy savoury salty herbal flavour contrasted by fruity zesty tangy sour sweet notes, refreshing and surprising. The al-dente wide thick ramen noodles have a good chew with grainy sweet flavour. Note the regular ramen noodles toppings of bamboo shoots, chopped scallions, nori / dried seaweed, or bean sprouts, are not present. Instead, this is garnished with crisp diced white onions with vegetal sour sweet spice flavour, crisp spinach with vegetal sweet flavour, 2 slices of tender aburi pork belly chashu with smoky meaty savoury fatty flavour, a bouncy soy braised chicken egg with eggy salty sweet savoury flavour, soft kamaboko / fish surimi with sweet savoury flavour, and 2 slices of tender smoked duck breast with smoky meaty salty savoury flavour. So yummy. Highly recommended!

The Dan Dan Noodles (SGD $19.80) features a base of chewy al-dente wide thick ramen noodles with grainy sweet flavour, topped with crisp diced white onions with vegetal sour sweet flavour, crisp fried shallots with earthy savoury salty flavour, crunchy juicy tsukemono / pickles (shibazuke / red shiso marinated cucumbers and eggplant, kyurizuke / Japanese cucumber) with vegetal sour salty sweet herbal flavour, tender soy braised minced pork with meaty salty savoury flavour, crisp coriander with vegetal bitter herbal flavour, tender chunky soy braised pork belly with meaty salty savoury flavour, and crunchy cashew nuts with nutty flavour. A wobbly ontama / onsen tamago / soft boiled egg with eggy sweet flavour is served on the side. Mix everything together well and enjoy. Accompanied by a light dashi broth infused with yuzu, carrying earthy savoury salty herbal fruity zesty tangy sour sweet flavour. So filling. Highly recommended!
