Established by Leonard Fitzmorris and his son Tom Fitzmorris (after whom the restaurant is named) in 1983, T-Bone Tom's is a barbecue institution, famed for their hand-cut beef steaks, righteous Texas barbecue, and delicious sides. Currently owned and operated by husband-and-wife team Barry Terrell and Melissa Burns, T-Bone Tom's is acclaimed from being featured on Food Network's Diners, Drive-Ins And Dives, regularly drawing a crowd during peak meal periods.

Ambience at T-Bone Tom's has a rustic country barn vibe. Sturdy wooden furnishings, draped with checkered synthetic tablecloths, are packed neatly in the spacious and gently lit dining hall. Pots of green plants hang from the wooden beams overhead, while curios and knick-knacks are displayed as decor along the shelves lining the rafters. Quirky decals are pasted on the sloped ceiling. There's a good buzz from crowds during peak meal periods.

Service at T-Bone Tom's is friendly and attentive. Staff are quick to greet and seat guests, and they demonstrate decent product knowledge by offering recommendations and answering queries about the menu. The kitchen serves up orders within a reasonable waiting time, and staff also regularly check if your dining experience is going well. I note they have a well organised system with servers assigned to each table. Staff will clean up quickly when diners leave.

Food at T-Bone Tom's is American cuisine, focused on hand-cut beef steaks and Texas barbecue. The kitchen prepares dishes as ordered, adopting a rustic serving style using aluminium trays. Ingredients are fresh, and quality of execution is consistently high, as evident by the high volume of regulars. Portions are large for individuals. Prices are reasonable, more affordable than I'd expected, budget about USD $32 / SGD $44 per person for a meal here.

The Iced Tea (USD $3.29) here is served with a lemon wedge, and is refillable. Served chilled, the thin black tea has earthy flavour, enhanced with a touch of fruity tangy sour zesty flavour from the lemon, and is nicely refreshing. I ordered the unsweet version. Good!

Greatly enjoyed the Sliced Brisket Plate (USD $17.99), which came with a choice of 2 side dishes. The Smoked Beef Brisket was excellent, done in the Central Texas style of barbecue, with just a simple seasoning that emphasizes the meat. The Smoked Beef Brisket has a tender succulent juicy texture with enticing smoky meaty savoury salty spice flavour. Highly recommended!

Served on the side, their Barbecue Sauce (USD $Complimentary) is thick sticky and velvety in texture, with bright tangy sour sweet savoury spice flavour. Good!

The Dill Pickles & White Onions accompany the meal. The crunchy dill pickles lend a burst of vegetal sour bitter sweet flavour, while the crisp white onions carry a vegetal earthy sweet sour flavour. Refreshing, helps to alleviate the palate as you work through the barbecue.

Enjoyed the Coleslaw (USD $2.99), so refreshing as it was served chilled. Has a crunchy crisp texture with vegetal sweet sour milky flavour, nicely light on the palate. Good!

The Onion Rings (USD $3.99) were addictively tasty. Thinly sliced, the Texas onions are enveloped in a super crispy batter, shattering with a gentle crunch to release mild vegetal earthy sweet salty savoury flavour. Couldn't stop. Highly recommended!

The large slice of Pecan Pie (USD $5.99) was so decadent. The thick and chunky pie has firm crunchy crumbly texture, with warm nutty earthy sweet floral flavour. Topped with thick lashings of caramel sauce and a scoop of creamy smooth vanilla ice cream, which balanced the warm pie with cool floral earthy candied sweet flavour. Highly recommended!
