Opened by Owner-Chef Ernest Lim in August 2018, ZeroPlusOne is a pop-up, takeaway kiosk that serves Modern Singaporean light bites, snacks, and drinks. What makes ZeroPlusOne stand out for me, is their consistently well-executed sandwiches, each prepared to order, with fresh ingredients and unique twists on flavour. Better quality than you'd expect from a pop-up stall.

Ambience at ZeroPlusOne leverages on the atmosphere of the pasar malam / night baazar / night market or event venue it's located at. Typically open air concepts, there is no seating, and minimal shelter; you're meant to hold their dishes and eat-on-the-go, which is part of the appeal. Short queues tend to form in front of the stall, and you get to watch staff prepare your order.

Service at ZeroPlusOne is completely self-service, with ordering, payment, and collection over the kiosk. That said, staff are friendly and engaging, displaying good product knowledge on their menu, and helpfully offering suggestions. Order fulfillment takes an average of 8 minutes or so, a short waiting time. They also offer an option for cashless payment.

Food at ZeroPlusOne is Modern Singaporean, with Western and Asian influences. Think a mish-mash of American, British, Korean, and Japanese cuisines. Dishes are simple, mostly sandwiches and finger snacks, but each is carefully prepared, and cooked to perfection. Flavours are layered and complex. Portions are sized for individuals, and prices are affordable. Budget about SGD $8 per person for a meal here.

Experience a flavour knock-out with the signature Knock-Out Toast (SGD $8). Sandwiched between slices of crisp buttered and toasted white bread is a thick, juicy minced beef patty, shredded iceburg lettuce, cheddar cheese, and the kicker - peanut butter spread. Bite in, and you get the meaty savoury sweet flavour of the tender minced beef patty, the light vegetal sweet flavour of the crunchy iceburg lettuce, then the delightful earthy nutty sweet flavour of the sticky peanut butter. Really tasty, I wanted more. Good!

Named in homage to the popular 'Maple Story' massively multiplayer online role-playing game, the Maple-Tori Toast (SGD $7) is a whimsical burst of flavour. Sandwiched between slices of crisp buttered and toasted white bread is a thick, juicy breaded chicken katsu fillet, purple cabbage coleslaw, and maple syrup. Bite in, and you get the meaty sweet savoury flavour of the crisp outside tender inside breaded chicken, the delicate vegetal sweet flavour of the crunchy purple cabbage coleslaw, and the rich floral sweet notes of the sticky maple syrup. Delicious, loved every bite of this. Stays warm for quite a while too. Highly recommended!
