The culmination of a journey, which began in June 2002, The Soup Spoon Union is an amalgamation of the various brands under founder-chef Anna Lim (alongside husband Andrew Chan, and business partner Benedict Leow), offering the best from each of the 5 concepts, across the last 17 years. With a belief to continually strive for improvement, the ambience, service, and food at The Soup Spoon Union have been getting better all these years I've been visiting. The decision to combine and focus the 5 concepts of The Soup Spoon, Soup Broth Asia, The Salad Fork, The Grill Knife, and The Handburger, has really paid off.

Ambience at The Soup Spoon Union evokes a homely, comfortable, welcoming feel. The casual dining place is usually decked in warm wooden tones, highlighted by shades of white, metal, and black, offset by the corporate orange colours. Low overhanging lamps cast a soft, warm glow. Furniture is a mix of regular wooden tables, long wooden benches, and high booth seats. Fairly suitable for long, lingering meals, and chatting with friends.

Service at The Soup Spoon Union is partially self-service. As a casual dining place, they utilise technology, namely, tablet menus with helpful descriptions and pretty pictures, from which you order electronically. Staff will then serve orders to your table, after a short preparation time. However, you'll have to queue to pay over the counter. I notice staff are friendly, able to engage and assist with queries. They also clean up quickly when diners leave.

Food at The Soup Spoon Union features the best of all 5 concepts, with both Western and Asian influences, including American, British, French, Russian, Italian, Spanish, Chinese, Indonesian, Malay, Indian, Thai, Japanese, and more. Dishes are bold in flavour, yet generally healthy and wholesome. Portions are sized for individuals, and they're generous with ingredients. Prices have remained affordable all these years, even for students. Budget about SGD $14 per person for a meal here.

You'll usually get a choice of 2 dishes from any of their 5 concepts; The Soup Spoon, Soup Broth Asia, The Salad Fork, The Grill Knife, and The Handburger. Actually quite a substantial meal, good value for money especially for a casual eatery.

The Hot Chocolate With Marshmallows (SGD $4.50) takes after the Australian style, with a thin, milky texture, a light chocolatey sweet flavour, and a good foam head. Nicely warm, this hot chocolate beverage comes topped with 2 sticky chewy marshmallows, making it suitable as a dessert beverage after a meal. Slightly expensive for the quantity though.

The Squeezed Coco No. 9 (SGD $5.40) is an all-natural cold pressed juice, featuring a blend of coconut water, chia seeds, and raw honey. Has a fruity earthy floral sweet flavour, quite nice.

The Bread Roll (SGD $0.70) is served with every order of soup, and you typically get 1 of the 3 options. The white bread roll is soft, tearable, and chewy, with a light bready sweet flavour. Warm and comforting when held. So soft. The multigrain bread roll is slightly more firm and bouncy, with a robust grainy sweet flavour. The sun-dried tomato bread roll has a slightly spongy texture, with a bright vegetal sweet flavour.

The Steamed Corn Kernels (SGD $2.10) is a healthier side dish option. Simply steamed kernels of corn, with a bright juicy sweet flavour and light crunch to texture. Pairs well with any soup actually.

The Tangy Tomato With Basil (SGD $4.20) soup features a blend of vegetable stock (water, root vegetables, herbs), roasted tomatoes, cream, white onions, corn starch, balsamic vinegar, sugar, red bell peppers / capsicum, salt, garlic, basil, and chili. Inspired by the Spanish gazpacho, this vegetarian puree has an amber orange colour, with a creamy thick viscous texture. It has a bright tangy sour sweet flavour, followed by a kick of spicy heat that quickly fades. Warm, soulful, and comforting. Highly recommended!

The Roasted Pumpkin (SGD $4.20) soup features a blend of vegetable stock (water, root vegetables, herbs), roasted pumpkin, white onions, granny smith green apples, salt, sugar, garlic, cream, roasted almonds, and thyme. A classic British English pumpkin soup, this vegetarian puree has a golden yellow colour, with a thick creamy viscous texture. It has a bright earthy sweet mellow flavour, with a hint of nutty on the palate. Warm, comforting, and uplifting.

The Velvety Mushroom Stroganoff (SGD $5.30) stew features a blend of vegetable stock (water, root vegetables, herbs), button mushrooms, shiitake mushrooms, cream, corn starch, salt, sugar, white onions, grape must extract juice, garlic, butter, parsley, and thyme. A vegetarian version of the traditional Russian beef stroganoff, this stew has a grey silver colour, with a thick, chunky, gloopy texture, and a slight chew from the finely chopped ingredients. It has a deep earthy vegetal savoury flavour, with a hint of salty, rather well balanced. Soothing, comforting, and soulful with each mouthful.

The Meatless Minestrone (SGD $4.50) broth features a blend of vegetable stock (water, root vegetables, herbs), whole peeled tomatoes, tomato paste, cabbage, white onions, zucchini, red kidney beans, carrots, celery, durum wheat elbow macaroni pasta tubes, potatoes, leeks, garlic, basil, salt, sugar, parmesan cheese, gremolata (parsley, lemon rind, garlic, parmesan cheese), thyme, bay leaf, and oregano. Adapted from the traditional Italian minestrone, this vegetarian broth has a brick red colour, with a thin yet fortifiying texture. It has a bright vegetal sweet savoury herbal flavour. Nicely hearty and satisfiying.

The Boston Clam Chowder (SGD $6) is the most popular version of chowder, and features a blend of clam stock (water, razor clams, herbs), potatoes, cream, corn starch roux, celery, deshelled razor clams, white onions, milk, butter, sugar, salt, black pepper, hickory, bay leaf, and bread croutons. This traditional American Midwest clam chowder has a pearl white colour, with a chunky gloopy thick texture, contrasted by a light chew from the ingredients. It has a vegetal sweet savoury salty milky flavour. Nicely satisfiying and filling.

The Beef Goulash (SGD $6) is a goulash stew, and features a blend of beef stock (water, beef, root vegetables, herbs), marinated grass-fed beef brisket, carrots, potatoes, tomatoes, tomato paste, green bell peppers / capsicum, red bell peppers / capsicum, celery, cream, corn flour, shiitake mushrooms, white onions, sour cream, vinegar, sugar, sweet paprika, garlic, salt, parsley, bay leaves, and black pepper. Inspired by the classic Hungarian beef goulash, this has an apricot orange colour, with a thick creamy smooth texture, contrasted by a crunchy tender chew from the ingredients. It has a deep meaty savoury salty vegetal sweet flavour. Chunky and warming, like a fuzzy blanket hug.

The SG Chicken & Mushroom Ragout (SGD $5.60) is a ragout inspired by the American folk rock duo Simon & Garfunkel (Paul Simon and Art Garfunkel), whose song Scarborough Fair / Canticle sings of 'Parsley, Sage, Rosemary, and Thyme'. The ragout features a blend of chicken stock (water, chicken bones, root vegetables, herbs), marinated chicken, carrots, potatoes, cream, tomatoes, tomato paste, celery, abalone mushrooms, button mushrooms, oyster mushrooms, golden mushrooms, portobello mushrooms, shiitake mushrooms, white onions, durum wheat penne pasta tubes, sugar, balsamic vinegar, Worcestershire sauce, salt, parsley, sage, rosemary, thyme, bay leaves, sour cream, and garlic. This meaty stew has a sunrise orange colour with a tinge of white, and a mild smooth creamy texture to the soup / broth, while the ingredients have chunky tender crunchy textures. It has delicate sweet savoury milky herbal flavours. Heartwarming and gratifying.

The Tokyo Chicken Stew (SGD $5.10) is a soup / broth which features a blend of light soy sauce stock (water, soy beans, wheat, salt), chicken thigh, teriyaki sauce, salt, sugar, ginger, corn starch, vegetable oil, garlic, white onions, carrots, white radish / daikon radish, lotus roots, bamboo shoots, shiitake mushrooms, enoki golden mushrooms, leeks, and celery. Inspired by the Japanese teriyaki sauce from Tokyo, in the Kanto region of Japan, this soup / broth has an olive green colour, and a thin yet hearty body with chunky tender texture from all the ingredients. It has balanced earthy sweet savoury salty flavour. Comforting and soulful, fantastic on cold days.

The Beef Bourguignon (SGD $6.10) stew features a blend of beef stock (water, beef, root vegetables, herbs), grass-fed beef brisket, potatoes, carrots, tomatoes, celery, French beans, sugar snaps / sugar peas, button mushrooms, white onions, leeks, garlic, thyme, bay leaf, parsley, yellow mustard, and sour cream. A homage to the classic French beef bourguignon, this meaty stew has a brass brown colour with a tinge of yellow, and a rich chunky texture. Although it doesn't have red wine, it still has a robust deep meaty savoury salty starchy herbal flavour. Not as tasty as elsewhere, but still decently fulfilling. This is a festive Christmas special during November to December.

Inspired by the classic French lobster bisque, this lovely stew has a tan brown colour, and a rich creamy smooth texture. It has a luxurious sweet savoury crustacean flavour, with a hint of salty briny on the end. Feels rich and decadent. This is a festive Christmas special during November to December.

Inspired by the Japanese bijin nabe / beauty hot pots, this beautifying collagen soup is simmered for over 16 hours, resulting in a linen white colour, with a thin yet fortified texture, while the ingredients are nicely tender soft. It has a delicate milky earthy sweet savoury briny flavour. Feels restorative and boosting. This is a festive Chinese New Year special during January to February.

Popularised by the similarly named Disney Pixar movie, the French Ratatouille (SGD $4.70) stew features a blend of vegetable stock (water, root vegtables, herbs), potatoes, carrots, pumpkin, French beans, green bell peppers, red bell peppers, cauliflower, corn kernels, pears, zucchini, eggplant / aubergine, tomatoes, celery, white onions, garlic, basil, sour cream, oregano, fennel seeds, and thyme. Taking after the classic French dish, this hearty stew has a merigold orange colour, with a thin and chunky texture, while the ingredients are nicely tender soft with a slight bite. It has a bold, pronounced vegetal sweet herbal flavour. Feels so wholesome and healthy. This is a Fit-And-Fab special during March to April.

With the Chicken Gumbo (SGD $5.60), they've made a good attempt to recreate the classic Creole dish, although it leaves much to be desired. This stew features a blend of chicken stock (water, chicken bones, root vegetables, herbs), marinated chicken, potatoes, carrots, red bell peppers, green bell peppers, tomatoes, celery, lady's fingers / okra, white onions, garlic, spring onions, thyme, black pepper, and oregano, but lacking pork sausage, all-purpose flour roux, or butter. Inspired by the American Southern stew of the same name, this has a monarch orange colour, with a gloopy chunky texture, while the ingredients are nicely tender soft with a slight bite. It has a sharp peppery kick, followed by a mild savoury sweet earthy spice flavour. However, your palate will be rendered numb by the intense peppery notes, and the exclusion of key ingredients is a loss. Gave up on this. This is a Fit-And-Fab special during March to April.

Hail Caesar! The Caesar Salad (SGD $4.60) is a classic salad, with a mix of fresh lettuce, sun-dried tomatoes, hard boiled egg, croutons, and parmesan cheese. This has bright crunchy juicy soft crispy textures that alternate, with delicate fruity vegetal sweet eggy flavour. Straightforward and decent.

The Chilled Soba With Mushroom Salad (SGD $5.10) is a Japanese inspired salad, with a mix of chilled buckwheat soba noodles, carrots, dried seaweed flakes, cherry tomatoes, hard boiled egg, straw mushrooms, snow pea shoots, and snow pea pods. This has refreshing slippery crunchy soft textures, with sharp sour vegetal sweet earthy flavours. Starts out appetizing, but quickly becomes too intense; I wish they'd tone down the strong vinaigrette. Could be better.

The Asian Tofu Salad (SGD $4.60) is a Thai Chinese inspired salad, with a mix of fried tofu beancurd, mandarin orange slices, fried wanton skin, carrots, pea shoots, pine nuts, cherry tomatoes, and asian vinaigrette (fish sauce, Thai sweet chili, sesame seeds). This has refreshing crunchy juicy soft textures, with delicate tangy vegetal fruity sweet sour bitter flavours. Bites quickly on the palate, fades just as fast.

The Cranberry Fusilli With Chicken Salad (SGD $5.50) is a pasta salad, with a mix of fusilli pasta noodles, dried cranberries, sun-dried tomatoes, hard boiled egg, cherry tomatoes, alfalfa sprouts, corn kernels, and herb chicken. This has bright juicy chewy tender soft textures, with bold vegetal fruity sweet savoury flavour. Very nice.

The Flatbread Bulgogi Beef (SGD $5.50) features a crisp flatbread, filled with Korean inspired bulgogi marinated beef slices, Japanese cucumber, quinoa, and wild rocket leaves / arugula, coated in a sriracha sauce. During my visit, the wild rocket leaves / arugula was replaced with lettuce instead. This has alternating textures of crispy, chewy, grainy, and tender, with big bold bursts of meaty savoury salty vegetal sweet spicy flavours. Pure indulgence that still manages to feel healthy and wholesome.

The Flatbread Aloo Gobi (SGD $4.90) features a crisp flatbread, filled with wild rocket leaves / arugula, Japanese cucumber, edamame / immature soy beans, and an Indian inspired aloo gobi curry consisting of diced cauliflower, potatoes, and peas, cooked in a mild but savoury spicy curry of ginger, powdered coriander, garlic, lemon juice, white onions, cumin seeds, chili, salt, water, curry leaves, garam masala, and powdered turmeric. This has crispy, crunchy, tender textures, with mild vegetal bitter sweet savoury spice flavours. Decent rendition, wish it was more robust in taste.

The Grilled Atlantic Salmon Fish Fillet (SGD $16.80) features a medium thick slab of salmon fish fillet, bordering moist and dry with a flaky tender texture, nicely seasoned and grilled. Has a savoury salty sweet flavour, with a bit of the oily fish taste that salmon usually has. Got this served with a side of soft tender broccoli florets seasoned with dukkah / duqqa, a finely chopped spiced nuts mix, which lent bold savoury spice notes to the natural vegetal earthy sweet flavours; along with soft spaghetti pasta noodles in a weak basil and tomato sauce, which had light floral sweet flavours.

The Dory Fish And Chips (SGD $13.80) features 2 medium thick dory fish fillets, coated in a heavily seasoned and spiced batter, then deep-fried. Light crisp crunch on the outside, soft tender flaky dory fish meat inside. Has a robust savoury salty spice flavour, rather oily, and heavy on the palate... I couldn't finish it. The medium cut, straight potato fries have good starchy salty flavour, while the fresh mixed salad (with corn kernels, edamame / immature soy beans, iceburg lettuce, cherry tomato, cucumber, lemon wedge, wanton wrapper) on the side has juicy crunchy textures, with delicate fresh vegetal sweet flavours. Accompanied by a tangy zesty sour sharp lemon and herb vinaigrette, and a creamy garlic aioli. A decently satisfying plate.

The Chicken Thigh (SGD $9.90) features a medium thick chicken thigh, with a crispy skin and tender succulent chicken meat. Has a robust salty savoury flavour, being heavily seasoned. The miso corn kernels have a juicy burst of lovely vegetal sweet flavour, though I couldn't detect the miso paste. The basil pesto rice has a fluffy light texture, with rice grains that separate easily, and a herbal earthy flavour that is tasty. A tasty, full-flavoured plate.

The Grilled Beef Sirloin Steak With Chicken Bratwurst (SGD $20.80) features a thick slab of grass-fed beef sirloin, grilled till medium, yet still rather tough and chewy in texture, with an intense, overly seasoned, salty savoury meaty flavour. Coated in sharp spicy black pepper sauce. The chicken bratwurst sausages are bouncy and snappy, with a juicy savoury meaty bite, nice. Served with medium thick fries with a good salty potato flavour, and a fresh garden salad of corn kernels, edamame / immature soy beans, iceburg lettuce, cherry tomato, cucumber, lemon wedge, and wanton wrapper, which has a fresh juicy crunch to texture and bright vegetal sweet earthy flavours. Disappointed with this.

The Tuna Mayo Briowich (SGD $5.10) features 2 spongy soft brioche bread burger buns, that sandwich crisp arugula / wild rocket leaves, crunchy red onions, juicy tomatoes, creamy honey mustard mayonnaise, and a large, tender flaky hand-formed tuna fish patty studded with bits of zucchini and tomato. Has a lovely savoury sweet peppery flavour, am quite surprised that it lacks the usual sour tinge of other versions. Was pleased with this.

The Smoked Salmon Briowich (SGD $6.10) features 2 spongy soft brioche bread burger buns, that sandwich wispy alfalfa sprouts, crunchy red onions, juicy tomatoes, creamy lemon dill sauce, and generous fillets of tender smoked salmon fish. Has a bold zesty tangy sharp salty savoury flavour, nicely appetizing.

With The HandBurger (THB) Original (SGD $9.90), it features 2 fluffy soft sweet potato burger buns, that sandwich a thick, juicy, succulent minced beef patty, made from 100% grass-fed prime beef steak. Completed with crisp iceburg lettuce, soft caramelised onions, sticky onion jam, juicy tomato, and gooey cheddar cheese. Has robust savoury salty earthy sweet flavours. A good, straightforward burger rendition.

The Ultimate Chicken Burger (SGD $11.90) with the works. This features 2 fluffy soft sweet potato burger buns, that sandwich 2 tender moist chicken breast fillets, coated with gooey cheddar cheese. Completed with crisp iceburg lettuce, crisp battered onion rings, chunky mashed avocado, juicy tomato, bouncy button mushrooms, creamy caesar dressing, and a nice sunny-side up egg. Has a complex layering of savoury salty earthy sweet vegetal milky eggy flavours. Too huge to eat in a single bite, I had to go at it deconstructed, but it's still delicious and satisfying.

Loved the Carrot Walnut Cake (SGD $4.70). This moist and soft dessert cake is studded with crunchy walnuts and tender shredded carrots, spiced with cinnamon, and coated in a rich, smooth, cream cheese frosting on top. Has a earthy sweet spice flavour, with a warming feel. Actually, I feel this is among the better versions around. Good!
