This was an invited media review. I did not pay for the meal during the free hosted tasting session, but I did pay the standard price during prior and subsequent visits.

Styled as a casual Italian meets Southeast Asian fusion restaurant, Supply & Demand, which is operated by the Cre8 Group, first opened in the Esplanade in September 2013, with their second outlet in Orchard Gateway opening in May 2014. While it started life as a modern Italian Peruvian bistro and bar, Supply & Demand, whose name references a common business economics term, has since evolved by offering more Southeast Asian and Italian fusion flavours. True to their name! I've been to Supply & Demand several times over the years as a regular customer, and was excited to sample their new dishes.

The Best People |
Ambience at Supply & Demand is a highlight. Industrial chic meets faux greenery, with an eclectic mix of furnishings that resemble both a European countryside home, as well as a streetside cafe. Along with warm decorative lights, wooden shelves lined with books and bottles of wine, faux trees, lawn carpets, and soft leaf green cushions, the place exudes a comfortable lounge feel, suitable for lingering. Love the place!

Service at Supply & Demand is decent and functional enough. Staff are friendly, polite, and efficient, quick to seat diners and take orders. Empty / dirty tables are cleared quickly. Staff display simple product knowledge, though this is alleviated somewhat as the menu has ample descriptions of each dish. But there is very little engagement overall, mostly transactional in nature. There's now a regular line-up of musicians during peak dining periods and weekends.

Food at Supply & Demand was formerly about classic, rustic, Italian dishes in hearty portions, but they've since moved towards offering modern fusion plates in the form of Southeast Asian and Italian flavours, inspired by flavours that the founders experienced on their travels. Generally, most dishes are decently executed, with above average taste. Prices are affordable for the quality of food, and good value for money, budget about SGD $28++ per person.

The Coconut Mint Cooler (SGD $8) features a blend of coconut water, lime juice, honey, and fresh mint leaves. With bright earthy floral herbal sweet sour tangy zesty flavour, this is both refreshing and thirst-quenching.

The Ginger Peach Mule (SGD $8) features a blend of ginger ale, peach, peach syrup, and fresh mint leaves. With bold floral fruity sweet herbal spice flavour, this is energizing and lively.

The Japanese inspired Okonomiyaki Sweet Potato Fries (SGD $13 / $18) features medium thick, fluffy soft sweet potato fries, topped with thin nitsuke sauce (mirin rice wine, light soy sauce, white sugar), creamy Japanese mayonnaise, wispy katsuobushi / bonito fish flakes, crisp scallions, and crunchy furikake. This has robust savoury salty sweet spice flavour, best paired with beer. Really heavy for an appetizer though.

The Indonesian inspired Indomie Goreng Fries (SGD $12 / $17) features large thick cut, tender dense potato wedges, topped with fine Indomie seasoning, sticky kecap manis / sweet soy sauce, creamy mayonnaise, crisp red onions, a lovely fried sunny side up egg, and chopped red chili. This has robust salty sweet savoury spicy flavour, best paired with beer. Served with a sharp spicy chili dipping sauce. I liked this, but the others disagreed with me.

The promotional Oysters (SGD $2 per piece) are large, fresh, and juicy, bursting with beautiful briny salty sweet flavour. Available for purchase with every alcoholic drink ordered, these pacific oysters are sourced from Taylor Shellfish Farms in Seattle, Washington, United States Of America (USA), which is an uncommon (rare) source for oyster imports in Singapore. Served with lemon wedges and tabasco sauce. Good!

The unique Beef Carpaccio (SGD $15) features thinly sliced strips of chewy beef tenderloin, topped with crisp watercress, firm capers, tender sun-dried chili, and marinated with lemon juice, yuzu juice, and wasabi emulsion. Dressed with pretty edible flowers, this has a complex flavour profile of meaty savoury sour tangy fruity sweet bitter spice flavour. Rather enjoyable, you don't often see beef used in carpaccio. Good!

The Peach And Parma Ham Crostini (SGD $14) was our favourite dish of this visit. Has to be eaten quickly, lest the crisp toasted crostini baguette bread slices go soft. Features toppings of thin sliced, dry-cured chewy prosciutto / parma ham, juicy peach slices, creamy mascarpone cheese, soft shaved grana padano cheese, and crisp bits of garlic, drizzled with balsamic vinegar. Bite in, and you get a lovely burst of fruity sweet sour salty savoury herbal spice cheesy flavour. Highly recommended!

Easily our other favourite dish, the Baked Brie With Garlic Flatbread (SGD $17) was utterly enjoyable. The whole brie cheese wheel is baked till soft and slightly melty, then generously drizzled with sticky rich honey, sprinkle with crisp almond flakes and crumbly crunchy biscuit crumble, and finally dressed with a rosemary sprig. Served with crisp crunchy garlic flatbread which has a delicate bready herbal sweet spice flavour, the cheese glows on the palate with its rich honeyed sweet grainy cheesy savoury flavour. Highly recommended!

The Nero De Seppia With Seared Scallops (SGD $19 / $29) features squid ink infused spaghetti pasta noodles, tossed with garlic, white wine, homemade seafood broth, light cream, and butter. Garnished with cherry tomatoes, seared scallops, shaved grana padano cheese, and parsely. Unfortunately, this was undercooked during our visit, with the pasta noodles being much too firm (not al-dente), and the scallops being raw. Could be improved.

The Prosciutto E Funghi (SGD $16 / $21) features al-dente spaghetti pasta noodles, tossed with light cream, butter, and parmesan cheese. Garnished with thin sliced, dry-cured chewy prosciutto / parma ham, tender sauteed button mushrooms, and crisp crunchy pork bacon slices. This has addictive milky sweet salty savoury earthy flavours, tasting like a beautiful marriage between a Carbonara and Al Funghi pasta. Good!

The Avocado E Pesto (SGD $25 / $29) pizza has a medium thick pizza crust which was chewy, like it couldn't decide whether to be doughy or crisp. Not great. But the vegetarian toppings of garlic cream sauce, oregano, mozzarella cheese, crisp red onions, soft fresh avocado chunks, crunchy rucola, juicy cherry tomatoes, and grainy pesto sauce partially save this dish, lending bright vegetal sweet bitter earthy herbal flavours. I ate the toppings, and left the crust mostly untouched.

The Seared Beef With Pear (SGD $25 / $29) pizza has a medium thick pizza crust which was chewy, like it couldn't decide whether to be doughy or crisp. Not great. The creative toppings of chewy seared beef tenderloin, thin tomato sauce, soft quattro cheese (mozzarella, gorgonzola, taleggio, raclette), crisp toasted almonds, juicy fresh pear, crunchy rocket leaves / arugula, thin balsamic vinegar, and sticky thick honey seem disjointed on the palate, with clashing flavours of savoury salty cheesy nutty fruity sweet bitter herbal earthy all at once. Confusing and overwhelming.

The Paddle Pop Cheesecake (SGD $10) rides on the trend of bright and colourful desserts. But this is decent enough, with the cheesecake having a creamy dense texture that slices softly, the crumbly biscuit crumble base having a delicate grainy sweet flavour, and a proper cheesy sweet flavour. Worth ordering!

The Yam Taro Orh Nee Cake (SGD $10) didn't quite work for me, with the layers of soft sponge cake being dry, though the yam / taro paste is nicely creamy with earthy sweet flavour. Could be improved.

"What a name!", we exclaimed. The Unicorn Fart Cake (SGD $10) is essentially a standard rainbow cake, decent with soft creamy texture to the coloured sponge cake, with the floral sweet flavour of vanilla. What makes this slightly different is the addition of crunchy rainbow sprinkles and sticky chewy gummy bears, lending a bright candied sweet flavour to the dessert.

Having visited Supply & Demand many times over the years, I'm glad they're still going strong. Their unique fusion cuisine is tasty and novel, and the place lends well to casual everyday dining.
