Opening in February 2016, Pink Flake has since gained acclaim for being among the best fish and chippery shops along St Kilda in Melbourne, Australia. The appeal of Pink Flake can be summarised thusly; good variety of fresh fish, fried to order, at affordable prices. However, it's also true that competition in the area for a fish and chip shop is fairly low.

Ambience at Pink Flake is bare-bones functional. The interior is largely taken up by the huge kitchen, with few seats, so most people either order takeaway, or choose to sit outdoors on creaky wooden benches under the trees. Hungry birds constantly prowl the perimeter, boldly approaching empty tables to steal bites of leftovers. The feel is rustic and outdoorsy. Prepare to defend your meal.

Service at Pink Flake is completely self-service, with ordering, payment, and collection of orders over the counter. Staff engage in little conversation beyond transactional statements, and the menu is clear enough that little product knowledge is needed. Where it counts though; is speed in order fulfillment, dishes are prepped and served quickly. Cleaning up is performed leisurely, encouraging the flock of birds.

Food at Pink Flake is all about British English fish and chips, along with popular Australian side dishes. Expect a lot of fried and battered items. What makes them stand out, is the lightness of their dishes, not overly greasy or heavy on the palate. I like that their ingredients are fresh. Portions are medium large for individuals. Prices are more affordable than elsewhere, budget about AUD $15 / SGD $14 per person.

The Lemon, Lime, And Bitters (AUD $9 / SGD $8.40) is a refreshing, cooling, non-alcoholic beverage made with a blend of lemonade, lime cordial, soda water, and Angostura bitters. As its name suggests, this has a bright tangy zesty sour sweet herbal bitter flavour, with a thin fizzy texture.

Their version of Dim Sim (AUD $1.50 / SGD $1.40) is much smaller than elsewhere, but the filling of seasoned minced pork and cabbage is nicely warm and moist, with a tender bite, and good meaty savoury sweet salty flavour. The fried all-purpose flour dough dumpling wrapper is thin and crisp, cracking gently when bit. Worth ordering!

It's a standard, straightforward Potato Cake (AUD $1.50 / SGD $1.40). These are lightly battered, with a firm dense bite, and carry little flavour. Needs more salt I think.

The Fish And Chips - Flake (AUD $12.95 / SGD $12.10) are served with fresh crunchy coleslaw (shredded carrots, purple cabbage, lettuce) with bright vegetal sweet flavour, thick cut British English chips with fluffy soft texture and delicate savoury salty potato flavour, creamy tartar sauce with tangy sour flavour, and a wedge of lemon. The medium large piece of flake fish has a light batter, which crunches softly to reveal the warm, moist, flaky fish within. You can still taste the natural sweet savoury flavour of the flake fish, followed by a hint of salty from the batter. I sprinkled extra malt vinegar over for a bright tangy sour burst. So yummy. Highly recommended!

You can taste the natural savoury sweet flavour of the blue grenadier fish, followed by a hint of salty from the batter. This fish has a stronger, more pleasant flavour, making it more appetizing. Highly recommended!

The Salt & Pepper Calamari Squid (AUD $13.95 / SGD $13.10) are served with fresh crunchy coleslaw (shredded carrots, purple cabbage, lettuce) with bright vegetal sweet flavour, thick cut British English chips with fluffy soft texture and delicate savoury salty potato flavour, and a wedge of lemon. The chunks of calamari squid have a bouncy chew to texture, and the light and crisp spiced batter lends a delicate sweet salty savoury spice flavour. I enjoyed this with tomato ketchup. Highly recommended!
