Widely known for its minimalist and sustainable concept, household and consumer products brand Ryohin Keikaku Co., Ltd., more commonly known as Muji, branched into food and beverage with the opening of the first Singapore-based Muji Cafe in September 2015. At Muji Cafe, they've carried on the minimalist wholesomeness of the brand into their dishes, offering simple yet tasty set meals.

Ambience at Muji Cafe retains the modern minimalist look of the brand. With warm lights, clean straight lines, and lots of wooden furnishings, there is a calming, zen serenity to the place. There tends to be an earthy smell of dashi broth lingering in the air, and curious shoppers passing by to look at the attractive display of dishes.

Service at Muji Cafe is completely self-service, with ordering, payment, and collection over the counter. Diners are also encouraged to clear their own trays. You only interact with staff when placing orders, so there's little opportunity to display product knowledge, as they prefer to perform transactions quickly to clear the queue.

Food at Muji Cafe is mostly Japanese, Chinese, and French inspired, with predominant Asian flavours. Their set meals are sustainably produced, balanced, and wholesome, and you feel more healthy eating clean. Portions are sized for individuals. Prices are value-for-money, budget about SGD $19 per person for a set meal. Menus change with the season.

As its name implies, the 16-Grain Rice (SGD $2) is a nutritious, wholesome combination of 16 types of grains. With a fluffy soft sticky texture, the blend includes Toyama Koshihikari white rice, barley, red rice, brown rice, glutinous foxtail millet, regular foxtail millet, barnyard millet, quinoa, sorghum, adlay, and more. It has a fragrant, grainy sweet flavour, and provides rich carbohydrates, vitamins, minerals, fibre, and enzymes that aid metabolism.

The White Rice (SGD $2) here uses Toyama Koshihikari white rice, which is noted for its distinct grainy sweet flavour, having been irrigated by nutrient rich spring water. Steamed till slightly fluffy soft, with a sticky texture.

The Onion Bread Roll (SGD $1) borders between moist and dry, and has a firm spongy texture. Very fragrant, with a delicate earthy savoury flavour reminiscent of onions.

Loved the balanced flavours in their Miso Soup (SGD $2), which has a hazy look with a thin astringent texture. Filled with soft cubes of silken tofu beancurd, this warm soup / broth has bright earthy savoury flavours from the rich miso paste.

The Cumin Carrot Soup (SGD $2) has a rich, creamy smooth, thick texture. Warm yet light on the palate, the notes of carrots and cumin spice combine in a pleasant medley of vegetal earthy sweet flavours.

The Lime, Dill, Octopus, Summer Stone Fruit Salad (SGD $2.80) has bouncy chunks of octopus marinated in lime juice, which lends a zesty tangy sour citrus note to the natural sweet savoury flavour of the octopus. Tossed with crisp crunchy juicy vegetables (dill, Japanese cucumbers, red onions, lettuce, cherry tomatoes, red radish) which have vegetal sweet flavours. Completed with tender flame-torched purple olives with smoky earthy bitter flavour, and a sharp tangy sour dressing of grapefruit juice and dijon mustard.

The lovely Prawn Couscous Salad With Yuzu Sesame Dressing (SGD $2.80) has bouncy deshelled prawns / shrimp, tossed with grainy couscous, crunchy broccoli florets, juicy cherry tomatoes, and crisp red onion, completed with an aromatic yuzu and sesame dressing. This has bright zesty tangy vegetal grainy sweet sour flavours, nicely refreshing.

The star of the Black Fungus Hijiki Salad (SGD $2.80) has to be the black fungus / cloud ear fungus, with its light satisfying crunchy slippery texture and deep earthy flavour. Tossed with smooth hijiki seaweed, crunchy shredded Japanese cucumber and carrots, along with a light sesame dressing. This has nice earthy nutty sweet herbal flavours.

The chilled Turkey Ham And Baby Potato Salad (SGD $2.80) features a blend of soft baby potatoes, chewy turkey ham and turkey bacon, juicy red apple slices, and creamy gherkin yoghurt dressing that resembles the Greek tzatziki, completed with a dash of Korean red pepper flakes. This has refreshing milky sweet sour savoury salty spice flavours, very enticing.

The Duo Apple Kale Salad, Maple White Wine Vinegar Dressing (SGD $2.80) has a complex combination of textures and flavours, from the blend of juicy red apples, juicy green apples, leafy kale, crunchy brussels sprouts, crisp red radish, hard pomegranate seeds, tender chestnuts, and firm roasted pine nuts. Completed with a maple white wine vinegar dressing, this is served chilled, and has bright vegetal fruity sour sweet bitter savoury earthy nutty herbal flavours. Very refreshing.

The Smoked Duck And Sweet Potato, Arugula Salad (SGD $2.80) features a blend of tender roasted sweet potatoes, crunchy red bell peppers / capsicum, crunchy yellow bell peppers / capsicum, crisp rocket leaves / arugula, and tender succulent smoked duck slices. Completed with a cinnamon balsamic vinegar dressing, this chilled salad has bold vegetal sour sweet earthy savoury bitter flavours. Didn't appeal on first bite, but it gradually grows on you.

The Slow Cooked Chicken Leg With Tomato Dashi Broth (SGD $11.90) is a filling dish. The chicken leg is slow brined with sage, then roasted to finish, resulting in the chicken meat being moist and tender, pulling easily off the bone. The yummy both of peas, tomato, and dashi seaweed stock lend a lovely savoury earthy sweet flavour to the chicken. Rather filling portion too.

Loved the Sakura Chicken With Curry Miso And Dried Chili (SGD $12.90). This features sakura chicken which are reared in environmentally friendly farms. The chunks of chicken are tender and juicy, coated in a rich thick gravy of Japanese curry, miso paste, and dried red chili, giving it an addictive savoury salty spicy sweet earthy flavour. Served over crisp lettuce, chard, and baby spinach, which hold good vegetal bitter earthy sweet flavours. I enjoyed this.

The Barramundi, Petite Vegetable And Celery Pesto (SGD $18.90) is so healthy. The thick tender flaky cut of barramundi fish fillet is fresh, with a delicate sweet savoury flavour, and the juicy sliced cherry tomatoes and soft diced carrots lend good vegetal sweet flavour. Completed with crunchy pine nuts, in a rich fish stock and pesto gravy, which has bold sweet savoury salty herbal flavours. I slowly savoured every morsel of this, and mopped up the delicious gravy.

The High Tea Set (SGD $8.85) is a promotion, where you choose 1 slice of cake or 1 dessert, and you get a reduced price on 1 drink. The Sweet Purple Potato And Chestnut Roll (SGD $7.90) has a soft butter sponge cake, swirled with creamy chestnut cream studded with bits of tender chestnuts, finished with piped strands of grainy thick purple sweet potato paste. Garnished with a tender caramelised chestnut, and a crisp white chocolate chip. This lovely dessert has bold earthy sweet nutty flavours, so yummy. The Lychee Sunset Tea (SGD $4.90) features a blend of sunset black tea, lychee juice, lime zest, and sugar cane syrup, giving it a lovely fruity earthy sweet flavour with a hint of zesty tangy notes.
