Since opening in The St. Regis Singapore hotel in December 2007, Yan Ting restaurant has been a stalwart of the Chinese Cantonese fine dining scene, the epitome of extravagance and luxury. These days, there are plenty of Chinese fine dining restaurants around, but Yan Ting has certainly stepped up their game, remaining a premium dining destination of choice, serving well-executed and refined gastronomic delights on each plate.
Ambience at Yan Ting is opulent. The grandeur of the interior exudes a classy elegance, without being too over the top. The tastefully arranged layout is suitable for business or private dining, and the decor enhances the overall ambience without being too loud. I also like the bright ambient lighting, which isn't too harsh or dim. The pearl marble floors and plush furnishings feel sophisticated and comfortable.
Service at Yan Ting restaurant is professional, discreet, and polite. Staff may not make much conversation, but they are attentive and observant. The accord each table good attention, answering queries, fulfilling requests, serving orders, and proactively clearing finished plates with finesse. Communication in English or Chinese Mandarin is decent. Felt very well treated here.
Food at Yan Ting follows the Chinese Cantonese philosophy of freshness of ingredients, little usage of herbs, and well balanced dishes that are naturally flavourful but not greasy. Yan Ting restaurant prepares classic Chinese Cantonese dishes according to time-honoured recipes, but presents them in beautiful contemporary style. Portions are sized for individuals, but dishes are best shared. Prices are high. Prepare to splurge, budget about SGD $245 per person for a meal here.

We visited for the Yan Ting Dim Sum Brunch Buffet, which features a starting price of SGD $138 per person for a 2-hour dining duration. With the champagne package add-on, this comes up to SGD $208 per person. There are 4 dishes which are limited to 1 serving per person, but everything else is unlimited servings. Despite the name, there isn't much variety of dim sum, instead, the buffet menu features popular ala-carte dishes from the regular menu.

The Champagne Barons De Rothschild NV Brut is an exceptionally fine bubbly, brewed in partnership between the 3 branches of the Rothschild family (Château Mouton Rothschild, Château Clarke - Edmond De Rothschild Group, Château Lafite Rothschild) on a common terroir in Montagne De Reims, Champagne, France. This sparkling wine comprises 60% Chardonnay white grapes and 40% Pinot Noir black grapes, has a brilliant pale green gold colour, with aromas of pear, almonds, dandelion flowers, and lemon. The body is strong, well-rounded, and refined, sporting fine bubbles and a persistent foam, and tastes of brioche bread, green apple, peony flowers, and hazelnut. Has a gentle fruity floral nutty sour sweet flavour, fresh with a long finish.

Limited to 1 serving per person, the Steamed Crystal Shrimp Dumplings, Caviar is the luxurious version of har gow / shrimp dumplings. The thin chewy translucent skin of the steamed dumpling holds a juicy crunchy filling of fresh shrimp, bursting with sweet savoury flavour. The topping of sturgeon fish caviar lend a juicy burst, carrying briny salty sweet flavour. Highly recommended!

Limited to 1 serving per person, the Deep-Fried Prawn Rolls, Mango features juicy tender minced shrimp and soft mango wrapped within a deep-fried rice flour wrapper. Bite in and you get a burst of meaty fruity sweet savoury flavour. The lovely contrast of taste is rather addictive. Highly recommended!

The Pan-Fried Radish Cake has a light crisp exterior with a tender soft interior to the radish cake. Carries a lovely earthy salty savoury flavour in each bite. I like dipping this in chili sauce for added spicy kick. Worth ordering!

The Pork Dumplings, Chili Oil are slippery smooth, each juicy morsel packed with tender minced pork within the thin dumpling skin. Picks up the gravy of chili oil, soy sauce, and black vinegar well, bursting with meaty sour spicy salty sweet flavour. Bits of crisp spring onions lend a vegetal sweet note, while the sliced red chili lends colour and a touch more spicy heat. Good!

Limited to 1 serving per person, the Double-Boiled Abalone Consomme, Cordyceps Flower is incredibly delicious. The thin broth is packed full of herbal sweet savoury earthy flavour, so addictive. A whole abalone sits within the tea pot, staff prompted us to remember to eat it, and it was tender bouncy with sweet savour herbal flavour. We wished for more. Highly recommended!

The Sweet Corn Broth, Crab Meat is really filling. The thick gloopy egg drop soup is filled with wispy egg, juicy corn kernels, and chunks of deshelled crab meat, resulting in a vegetal sweet savoury eggy flavour, yum. Makes you feel full really quickly, which isn't great at a buffet, and is therefore best shared. Good!

Felt the Honey Glazed Barbecued Pork was average. The char siew / marinated roast pork loin has a nice chew, carrying a bright meaty sweet savoury salty flavour, with the sticky honey marinade nicely caramelised. However, it was rather lacklustre compared to the other high quality dishes we had, being overall decent at best. Could be improved.

Felt the Roasted Chicken was average. The boneless roast chicken has a bouncy moist chew to texture, with robust meaty salty savoury flavour. However, it was rather lacklustre compared to the other high quality dishes we had, better to skip this and save stomach space. Could be improved.

The Deep-Fried Eggplant, Pork Floss was pretty good. The thin sliced and battered eggplant / aubergine / brinjal has a crisp crunch to texture, with a gentle vegetal sweet salty flavour. The wispy chewy pork floss lends a meaty savoury note. Visually though, it doesn't look like much. Good!

The Poached Spinach, Tri-Colour Eggs is served in a rather large portion. Almost like a soup, the robust broth of chicken egg, century egg, salted egg, and garlic, carries a bold eggy salty sweet herbal flavour. Filled with soft crunchy spinach leaves with vegetal sweet flavour. Good!

The Sweet And Sour Pork, Tri-Colour Peppers, Pineapple is yummy, served in a rather large portion. The medium chunks of tender crunchy pork are coated in a sticky sweet and sour gravy, robust with meaty sour sweet savoury flavour. Garnished with crisp bell peppers / capsicum carrying vegetal bitter sweet flavour, and juicy pineapple slices with fruity sweet flavour. Highly recommended!

The Stir-Fried Beef Tenderloin, Spring Onions, Black Pepper Sauce is delicious. The medium chunks of American beef tenderloin are chewy juicy with a medium-rare doneness, carrying good meaty savoury salty flavour. There's crisp white onions and crunchy spring onions with vegetal herbal sweet flavour, and crisp bell peppers / capsicum carrying vegetal bitter sweet flavour. All of this is coated in a rich thick black pepper sauce, lending an addictive peppery salty spice flavour. Highly recommended!

The Pan-Seared Scallops, Chef's Special Sauce wasn't quite what I expected, as it features tender juicy scallops coated in a thin crisp batter, with sweet savoury flavour. Garnished with Chef's secret sauce, which contributed salty savoury spice notes. Actually, I would have liked it better if it wasn't battered. Could be improved.

Loved the Deep-Fried Soon Hock / Marble Goby Fish so much, that we got additional servings of it. The large boneless fillets of soon hock / marble goby fish have a crisp crunchy exterior, a soft flaky tender interior, and pick up the sweet salty savoury flavours of the soy sauce gravy well. Bits of crisp spring onions lend vegetal herbal sweet flavour. Highly recommended!

Limited to 1 serving per person, the Deep-Fried Boston Lobster, Egg Floss has a large meaty succulent Boston lobster coated in fried egg floss, well executed. Pulling easily off the shell, the chunky lobster meat is juicy crunchy tender with lovely sweet savoury flavour. A luxurious morsel. Highly recommended!

Not quite what I expected with the Fried Rice, Sakura Shrimp, Olive, Egg White, which features white rice tossed with sakura shrimp, green olives, and egg white. With a fluffy loose grainy chewy texture, this held deep shrimpy savoury salty earthy flavour. Served in a rather large portion towards the end, we couldn't quite finish this. Worth ordering!

The Glutinous Rice Ball, Black Sesame Paste was decent, with balls of chewy glutinous rice filled with a thick rich black sesame paste, coated with grainy finely crushed peanuts. Bite in to the room-temperature treats, and you get a burst of sweet earthy nutty flavour. Worth ordering!

The Aloe Vera Jelly, Fresh Fruits was nicely refreshing. The wobbly soft aloe vera jelly sits in a sweet herbal syrup, surrounded by juicy fresh fruit (peach, raspberry) with fruity sour sweet flavour. Good!
