Friends wanted to try the highly-rated Jeju Osung Traditional Restaurant (제주오성), which is reputed for serving cutlassfish / largehead hairtail fish and mackerel fish, in a couple of traditional styles. Due to their popularity, Jeju Osung Traditional Restaurant has upgraded their premises from their former homely shack, to a proper modern restaurant.
Ambience at Jeju Osung Traditional Restaurant is modern and spacious. The brightly lit place has floor to ceiling glass panels, offering a view of the surroundings. Wide sturdy wooden tables with cushioned booth seats are neatly spread across the spacious restaurant, with green boxes separating the space. During peak periods, chatter fills the air.
Service at Jeju Osung Traditional Restaurant is attentive and efficient. Staff communicate in halting English and Mandarin, fluent Korean. The menu helpfully offers good translation with pictures, so self-service ordering is a breeze. Staff help fillet the grilled fishes tableside, a treat to watch them expertly de-bone the fish. I note they clean up quickly when diners leave.
Food at Jeju Osung Traditional Restaurant is traditional Korean cuisine, focused on grilled and braised fish dishes. Ingredients are fresh, and their popularity means good turnover throughout the day. Meals are hearty with a good range of accompaniments. Portions are large, designed for communal sharing. Intrigued by the Beer Jeju Osung Son IPA (KRW ₩5,000), their own house brew. It pairs nicely with the grilled fish dishes, contrasting with its fruity sour sweet zesty tangy flavour, so refreshing. Good!

The Ssalbap / Steamed White Rice (Part Of KRW ₩110,000 Set For 4 Persons) serves as a great base for gravy dishes, with its sticky fluffy moist texture and grainy earthy sweet flavour. Their version seems to incorporate bits of foxtail millet within. Worth ordering!

A good range of Banchan / Side Dishes (Part Of KRW ₩110,000 Set For 4 Persons), all tasty and well-executed. Their Eomuk Bokkeum / Stir-Fried Fish Cake is among the better renditions, thick-cut and chunky soft with savoury salty sweet flavour. The Kongnamul / Cold Soy Bean Sprouts is refreshingly crisp and juicy, with vegetal sweet nutty flavour. The Yangpa Jangajji / Pickled Onions is crisp and crunchy, with bright sweet salty sour spice acidity notes. The unique Gosari Namul / Stir-Fried Fernbrake Seaweed is chewy tender, with vegetal earthy nutty savoury salty flavour. I loved the Japchae / Stir-Fried Sweet Potato Glass Noodles too, slippery silky crisp with vegetal starchy savoury sweet flavour. Good!

Filled with crunchy smooth kelp seaweed and soft sea urchin, the robust soup / broth takes on a strong vegetal earthy briny salty sweet flavour. Soulful and addictive, we kept reaching for more. Highly recommended!

The Galchi Gui / Grilled Cutlassfish / Grilled Largehead Hairtail Fish (Part Of KRW ₩110,000 Set For 4 Persons) features the long cutlassfish / largehead hairtail fish in all its elongated glory, expertly deboned and filleted tableside. For a fish with many fine bones, I commend the staff for doing a good job removing most. It's semi-dry and tender flaky, with a smoky savoury salty flavour. Good!

Enjoyed the Galchi Jorim / Braised Cutlassfish Spicy Stew / Braised Largehead Hairtail Fish Spicy Stew (Part Of KRW ₩110,000 Set For 4 Persons), with the chunky fillets of tender flaky cutlassfish / largehead hairtail fish, soft daikon radish chunks, and crisp spring onions in a thick stew that's resplendent with sweet savoury salty spicy flavour. The ingredients absorb all that yummy flavour, making this a dish best paired with white rice. Highly recommended!

The Godeungeo Gui / Grilled Mackerel Fish (KRW ₩15,000) features a deboned Spanish mackerel fish, grilled to perfection. The fish meat is slightly oily, with a tender flaky chewy texture, and robust smoky salty savoury flavour that carries a tinge of fishy note. Very addictive, I kept picking at it. Highly recommended!
