Description:
The Mutton Soup And Sup Kambing refers to 2 distinct dishes, a Singaporean Indian Malay dish, and a Singaporean Chinese Hainanese dish. Both feature stewed mutton parts, the former with spices, the latter with herbs, sometimes served with toasted bread or rice. Also known as Kambing Kuah, Kambing Sop, Goat Soup, or Lamb Soup, the Mutton Soup And Sup Kambing dish is usually priced around SGD $7 to $40 per serving. An uncommon dish usually eaten for either lunch or dinner, especially on cold or rainy days.


With the Singaporean Indian Malay version of Mutton Soup And Sup Kambing, chunks of goat meat are cut off the bone, then stewed with a medley of spices including garlic, ginger or galangal, white pepper or black pepper, turmeric, coriander, fennel, curry powder, cardamom, cumin, star anise, cloves, cinnamon, salt, and optionally, lemongrass, green chili, nutmeg, or candlenut. An optional selection of vegetables may be added, including onions (white, yellow, or red), potatoes, or spring onions. Served with fried shallots and fresh coriander, the hot soup / broth is cloudy and medium-thin in texture, the vegetables and mutton meat are tender and chewy, all carrying robust meaty savoury salty earthy spice flavour.

With the Singaporean Chinese Hainanese version of Mutton Soup And Sup Kambing, chunks of goat meat are cut off the bone, then stewed with a medley of herbs including garlic, ginger or galangal, white pepper or black pepper, bei qi / astragalus root, gan cau / liquorice root, dang shen / codonopsis root, dang gui / angelica root, yu zhu / Solomon’s seal, chuan xiong / Sichuan lovage root, goji berries / wolfberries, fu ru / fermented bean curd paste or nam yue / red fermented bean curd paste, sugar cane, star anise, cloves, cinnamon, salt, and optionally, lemongrass, jujube / red dates, or lime juice. An optional selection of vegetables may be added, including black fungus / wood ear fungus, bamboo shoots, or spring onions. Served with fried tofu bean curd sheets, tofu puffs, mutton meat balls, and fresh coriander, the hot soup / broth is clear and thin in texture, the vegetables and mutton meat are tender and chewy, all carrying robust meaty savoury sweet bitter herbal flavour.

The Mutton Soup And Sup Kambing may also feature other exotic cuts of goat, besides the usual boneless mutton meat, bone-in mutton ribs, or mutton meat balls. Since August 2004, this street side fast casual 24-hour eatery has been a go-to in town, from when I used to work nearby.

Their rendition has a unique creamy medium-thick texture to the soup / broth, rich and spice-forward, with a greater use of turmeric. The boneless mutton chunks are tender while the caramelised yellow onions are soft. Has pleasant meaty savoury salty earthy spice flavour, mild yet enticing and tasty.

Served alongside crisp toasted buttered baguette bread slices, carrying bready sweet savoury toasty buttery flavour.

Founded as a pushcart in the 1970s, this renowned hawker stall is now operated by 2nd-generation owner Syed Abdul Rahaman Mohammad Ahdam. Their consistent quality has seen them clinch the Michelin Bib Gourmand 3 times (2023, 2024, 2025).

The mutton meat (bone-in and boneless) along with various offal cuts, are stewed with a secret blend of spices for up to 3 hours in a custom-made copper pot, which is said to enhance the taste. The result is a medium-thin grainy soup / broth, chunky yet tender mutton meat, with balanced meaty savoury salty earthy sweet spice flavour, generally well-rounded.

Served with fluffy toasted baguette bread slices, carrying bready sweet savoury toasty flavour.

The deboned mutton shank is seasoned and marinated with 5-spice powder, but the generous portion of hot soup / broth is traditionally spiced. Spices include cumin, cloves, cinnamon, and more, though less turmeric is used.

The result is a thin cloudy soup / broth, deeper in colour than other versions, carrying meaty savoury salty earthy spice flavour. Said to be founded sometime in the 1980s, this specialist stall first gained online attention in October 2018.

Various cuts of mutton are simmered for over 3 hours, along with turmeric, coriander, fennel, cardamom, cumin, star anise, cloves, celery seed, and other spices, in a huge stainless-steel pot. The meat is then removed to prevent over-cooking, while the hot soup / broth is continually simmered. Combined only upon serving, the assembly is done bowl by bowl.

The result is a thick cloudy rich soup / broth, with robust meaty savoury salty earthy spice flavour, and a thin sheen of oil. The mutton meat is chunky and tender soft, with meaty savoury spice flavour. Garnishes of fresh coriander and fried shallots carry a crisp crunch and vegetal herbal earthy sweet flavour. Served with fresh baguette bread which is crisp and soft with bready sweet flavour.

They offer a range of mutton parts, besides mutton meat and mutton ribs, there is tongue, stomach / tripe, bone marrow, and brain. Timing and staggered cooking is carefully controlled so each part is consistently done.

Established sometime in the year 2000 by Max Ng and named after his wife, this beloved stall continually draws long queues, and on occasion, sells out within 1 hour of opening for the day.

They source mutton from New Zealand, and are known to omit ginger in their hot soup / broth served in bubbling clay pots, which is stewed with about 20 different herbs including nam yue / red fermented bean curd paste. Their thin and light soup / broth has deep meaty savoury sweet bitter herbal flavour.

The tender boneless mutton meat has meaty savoury flavour, the succulent bone-in mutton ribs slide easily off the bone, the juicy goji berries / wolfberries lend herbal sweet bitter flavour, the crunchy black fungus / wood ear fungus has vegetal earthy savoury flavour, the bouncy button mushrooms carry vegetal earthy sweet flavour, the spongy tofu puffs have grainy savoury flavour, and the crisp fried bean curd sheets have grainy savoury salty flavour.
