Founded in September 2016 by Jamie Liow, Ajiya Okonomiyaki Restaurant is a popular Singaporean dining spot known for its DIY interactive teppanyaki-style Japanese okonomiyaki pancakes. Part of the appeal lies in being able to customise your own version of okonomiyaki with a range of ingredients.

Ambience at Ajiya Okonomiyaki Restaurant is cozy and compact, recalling to mind the small shops along the alleys of Japan. The air‑conditioned interior, traditional decor, and sturdy wooden furnishings lend a comfortable and intimate feel, particularly if you're seated at the open teppanyaki counter which allows you to observe your meal being prepared.

Service at Ajiya Okonomiyaki Restaurant has typically been friendly and attentive. Staff were on hand to offer help, and clean up quickly when diners leave. That said, we did have 1 experience where our order was incorrectly served to another table, and staff frustrated us with clumsy recovery by offering that table's [different] dish to us, even though we already requested a re-do of our order. Overall though, service has been passable.

Food at Ajiya Okonomiyaki Restaurant is Japanese cuisine, focused on customised okonomiyaki pancakes. While the menu range is focused, each dish is well-executed and tasty. Portions are sized for individuals, but may be shared. Prices have a premium, budget about SGD $60 per person.

The Beer Sapporo Draught (SGD $11) is an American style, bright straw golden lager, brewed by Sapporo Breweries Limited in Shibuya, Tokyo, in the Kanto region of Japan. It has mild aromas of grass, corn, hops, and malt, with a crisp, clean, and light body texture. Flavours of rice, metal, green apple, and wheat husk, with a moderate carbonation. Finish is quick, clean, with little bitterness but slight metallic undertones, yet still remains refreshing.

The Chawanmushi (SGD $6) or Steamed Egg Custard features wobbly soft steamed egg, garnished with shiitake mushroom, deshelled shrimp, and diced boneless chicken. With a bouncy tender texture and bright eggy savoury sweet earthy flavour, this was a delight. Good!

Their Gyoza Pork (SGD $8.50) is home made, pan-fried to perfection with a golden hue and crispy edges. The dumplings have a medium thin chewy dumpling skin and ample juicy tender minced pork filling, carrying smoky meaty salty savoury sweet flavour, yum. Paired with a soy sauce on the side for dipping. Highly recommended!

The Gyu Tan (SGD $14) or Grilled Beef Tongue features a generous portion of tender crunchy pliant slices that are perfectly grilled, carrying meaty savoury salty fatty flavour. Garnished with a drizzle of lemon juice for added sour tangy zesty kick, bits of crisp spring onions for vegetal herbal sweet freshness, and paired with thin sesame oil for added earthy nutty flavour. Highly recommended!

The Okonomiyaki With Crab Meat Surimi, Pork Bacon, Spinach (SGD $18) features a base pancake blend of all-purpose flour or wheat flour, grated mountain yam / taro, whisked chicken eggs, and dashi stock, formed into a batter. It is then garnished with shredded napa cabbage, green onions, and the customer's choice of 3 toppings; we got the crab meat surimi, pork bacon strips, and spinach. Upon serving, the okonomiyaki pancake is finished with kewpie mayonnaise, okonomiyaki sauce, katsuobushi / dried bonito fish flakes, fine seaweed powder, and powdered red chili. Has crisp tender wispy soft tender crunchy textures, with lovely smoky earthy sweet vegetal savoury meaty salty starchy fishy spice flavour, delicious. Highly recommended!

The Yaki Soba With Pork (SGD $14) is served in a generous portion, with substantial ingredients of crisp cabbage, crunchy carrots, crisp spring onions, tender pork belly strips, and chewy thick wheat noodles, all stir-fried in light soy sauce and dark soy sauce. Garnished with wispy katsuobushi / dried bonito fish flakes, this has pleasing robust starchy grainy savoury meaty salty vegetal sweet earthy fishy flavour. Loved every bite. Highly recommended!
