As the in-house restaurant of The Warehouse Hotel, Po Restaurant, named for its signature dish of Popiah as well as "Po Po (paternal grandmother)", Po Restaurant opened alongside it in January 2017. Operated by The Lo & Behold Group, a hospitality group renowned for creating timeless and thought-provoking experiences for their guests, the menu at Po Restaurant features impeccable Mod-Sin dishes.
Ambience at Po Restaurant exudes a quiet sophistication and timeless elegance. Low warm lights, softly glowing from the large round lamps, cast shadows upon the curved rattan wooden chairs, plush cushioned booths, and marble topped tables. The place is cozy and intimate, seating up to 52 diners. Fine tableware contrasts the raw rattan panels on the walls, callbacks to their heritage yet designed for luxury.
Service at Po Restaurant is professional and attentive, with staff according each table personalised attention. They move purposefully and perform tasks efficiently, swiftly fulfilling requests. Staff proactively offer to clear finished plates throughout the meal, and clean up quickly when diners leave. They take the effort to check on diners during the meal, offering condiments and seeking feedback. In particular, they were particularly attentive and courteous towards elderly patrons.
Food at Po Restaurant is Modern Singaporean cuisine and Peranakan cuisine. The menu features classic Singaporean hawker favourites, elevated with premium ingredients but retaining the familiar comforting taste of home. Practically every component of each dish is painstakingly made from scratch. Portions are medium to large for individuals, and can be shared. Prices are reflective of a high-end restaurant, budget about SGD $85 per person.

The Cocktail Tongkang Drift (SGD $24) features a blend of lillet rosé wine, manzanilla sherry, sauvignon blanc white wine, Thai basil leaves, clarified guava juice, citrus (mandarin orange juice), and orange blossom. Served over ice cubes, this thin vibrant drink carries lovely fruity zesty sour tangy earthy floral sweet herbal flavour, with a bright crisp dry mouthfeel. The name of the beverage alludes to the historic tongkang boats; lightweight unmotorized cargo bumboats used on the Singapore River in the early 20th century.

The Popiah Platter (SGD $36) is the house signature dish, faithfully made according to family recipes. The hand-cut filling of pork loin, bamboo shoots, shrimp, carrots, jicama, and peas are stewed for up to 4 hours. You pack the filling together with lettuce, bean sprouts, shredded egg, dried flat fish, coriander, crushed peanuts, garlic, and red chili, on the wheat crepes, drizzle with a light sweet sauce. Fold it as you wish or follow the guided instructions. This Popiah Classic has a big juicy crisp crunch, with bright vegetal grainy earthy sweet eggy spice salty savoury flavour.
On the side are Kueh Pie Tee shells for you to finish off the remaining ingredients. Has a satisfying crisp crunchy juicy texture, with vegetal grainy earthy sweet eggy spice salty savoury flavour. Highly recommended!

Loved the Otak Blangah (SGD $32), an inspired Peranakan dish. It features minced wolf herring fish topped with homemade rempah / spice paste (a blend of galangal, garlic, candlenuts, dried red chili, belacan / fermented shrimp paste, shallots, turmeric, lemongrass, and more) and coconut milk, cooked in a clay pot, till it turns chunky soft grainy in texture with bright fishy sweet savoury spice flavour. Garnished with springy bouncy fish balls with fishy sweet savoury salty flavour, and soft wobbly egg tofu cubes with grainy earthy sweet savoury flavour. Highly recommended!

The Wagyu Beef Rendang (SGD $38) is a traditional Malay dish, featuring wagyu beef short ribs slow-braised with coconut milk and 11 aromatics herbs and spices (including galangal, lemongrass, shallots, red chili, cumin, star anise, fennel seeds, turmeric, garlic, and more), topped with a coconut milk crumble. The result is incredibly tender melt-in-your-mouth juicy wagyu beef rendang, carrying robust meaty savoury spice flavour. Highly recommended!

The Ikan Merah Oelek (SGD $88) is a Malay steamed and grilled fish dish, featuring the catch-of-the-day (red snapper fish in this case) marinated in sambal tumis / stir-fried chili paste, lime juice, white sugar, salt, white vinegar, shallots, lemongrass, tamarind, and ginger, then wrapped in banana leaves and grilled over charcoal which also lightly steams the fish. When unwrapped, the fragrant aroma is so addictive, with the red snapper fish meat being tender juicy flaky, the sauce chunky grainy juicy, everything carrying bright tangy zesty sour savoury salty sweet spice herbal flavour. Garnished with tender lady's fingers / okra and tender eggplant / brinjal / aubergine, both with vegetal sweet earthy zesty tangy sour herbal spice flavour. Only available on weekends and public holidays. Highly recommended!

The Nasi Telang (SGD $12) is a Peranakan staple, featuring white rice steamed with butterfly pea flower, pandan / screwpine leaves, lemongrass, kaffir lime leaves, and ginger. The result is a fluffy moist soft bite, with enticing grainy earthy herbal sweet flavour. Nicely appetizing. Good!

The Yuzu Cheng T'ng (SGD $18) is a chilled Chinese dessert, featuring a thin clear soup garnished with spongy pang da hai / malva nuts, gelatinous peach gum, crunchy white fungus, tender red dates, and juicy dried longans, crowned with icey yuzu sorbet and juicy pomelo bits. The Banana Cake (SGD $18) is a warm Eurasian dessert, featuring a lovely spongy soft chocolate banana cake, topped with creamy chunky hokey pokey ice cream studded with honeycomb bits, sprinkled with crunchy hazelnut brittle. Each bite is a delightful chocolatey bitter earthy fruity sweet nutty milky candied flavour, yum. Highly recommended!
