Located within the Sydney Fish Market, Peter's Fish Market is an award winning fish and seafood retailer that specialises in freshly caught / farmed fish and seafood. Open 7 days a week, Peter's Fish Market also has a kitchen which serves hot food, an interior dining area, and an exterior dining area.
Ambience at Peter's Fish Market varies depending on whether you choose to dine indoors or outdoors. The indoor furniture is clean and functional, but not very comfortable, though the well ventilated and open concept means there is very little fishy / seafood smell in the air. However, dining outdoors offers a great view of the wharf and a cool atmosphere, though you'll have to be constantly watchful for birds which may try to steal your food.
Service at Peter's Fish Market is good. Staff at the fresh ice rack display are knowledgable about their products, and can make recommendations. The chefs in the kitchen can also recommend several cooking styles / preparation styles for your food. Waiting time is minimal, about 5 - 10 minutes at most. However, you'll have to self-serve as Peter's Fish Market doesn't employ wait staff.
Freshness of the fish and seafood is the key attraction at Peter's Fish Market, and makes their food outstanding. You're better off ordering from the ice rack display, then having the food prepared in a style of your choice, as compared to ordering the pre-cooked food at the counter. This is because the fresh display has fish and seafood that is of slightly higher quality than the pre-cooked food. Prices are relatively cheap and affordable, as Peter's Fish Market is a wholesaler.

The huge ice rack display takes up the majority of floor space here, with various freshly caught fish and seafood on display. A kitchen and hot food counter is located at the back. You can order off the ice rack display, then have the chefs in the kitchen prepare the food in your choice of style, or have them suggest something for you.

I picked these off the ice rack display, then requested the chef to prepare it grilled, in a garlic butter sauce. It was served with a side of salad and a slice of lemon. Quite cheap, at SGD $23 / AUD $19, it was fresh, firm, and meaty. I thoroughly enjoyed eating it outside by the wharf.

The Grilled Calamari Squid, Grilled Octopus and Grilled Prawn are available as pre-cooked food. Of these 3, the Grilled Prawn stood out for me, with its large meaty body and freshness. The Grilled Calamari Squid and Grilled Octopus were average at best, and I suggest skipping them.

The Oyster Kilpatrick / Oyster Kirkpatrick and Oyster Mornay uses plump, juicy oysters. But I find that the best was ordering the Oyster Raw, off the ice rack display, and having them wrap it for you with a slice of lemon and a fork, then eating it outside at the wharf.

The Seafood Platter here is a special sampler of the various seafood being sold. While fresh, the seafood used in this kind of sampler is naturally of a lower quality, and this does affect the overall taste of the dish slightly. I find that ordering from the display, then having the chefs prepare it is much better than getting this pre-cooked sampler, and I suggest skipping this.

Update Oct-2014: Returned to Peter's Fish Market, and I'm glad to say they've consistently kept up the good quality of ambience, service, and food. They've expanded the fresh fish and fresh seafood display, now offering a greater variety of options.
Picked out some fresh fish and seafood for the Meal - Chargrilled Fish & Seafood, In Garlic Butter Sauce. The Grilled Salmon Steak has a tender, flaky texture, with a delicate sweet savoury oily flavour. The Grilled Tuna Steak has a firm, flaky texture, with a robust savoury sweet meaty flavour. The Moreton Bay Bug / Flathead Lobster has a clean, bouncy texture, with a light sweet crustacean flavour and a lovely fragrance. Fantastic meal, absolutely loved every bite.

Update Mar-2017: Much has changed since I last visited Peter's Fish Market over 2 years ago. Their business has expanded, and grown even more popular than before.
Ambience has been improved, the aging furniture replaced with sleek new wooden benches, and the place is kept clean and presentable. Service has improved, they've hired more staff, and trained them well in product knowledge. Operations have been streamlined, no longer do you need to purchase the fresh fish / seafood, then take it over to the cooking area. Now it's all in one, you pick out the fish / seafood, choose from a pre-set list of sauces, and it's cooked up for you. Food has remained consistent in freshness and quality, but there is now greater variety. However, they're more liberal in the amount of sauce in dishes now, sometimes drowning out the natural flavours. Overall, a good improvement, and still worthy of multiple repeat visits.
Among the new items here is the Aburi Scallops (AUD $11 / SGD $11.80). Part entertainment and part marketing, the new grilling station is located at the store front, and you can watch staff prepare each order while you wait. The scallops are fresh and plump, with a meaty bouncy texture, and a light delicate sweet savoury flavour. It's complemented by gooey salty savoury melted cheddar cheese, and some fluffy sticky white rice. Really good, I enjoyed this.

The Chargrilled Swordfish Steak In Garlic Butter Sauce (AUD $34.50 / SGD $36.70) was drowned in a generous portion of fragrant garlic butter sauce, but at least I could still taste the fresh swordfish steak beneath. The texture is firm and flaky, with a bold savoury sweet meaty flavour, and a hint of oily. Good!

The Stir-Fried Monkfish In Ginger & Spring Onion Sauce (AUD $16.40 / SGD $16.80) was enhanced through the use of the the fragrant, savoury sweet sauce of sliced ginger and spring onions. The fish has a soft, flaky texture, but the stir-fry helped crisp the exterior slightly, creating a nice crunchy crust, while the interior remained moist. Also among the cheapest fish available here. Worth ordering!

The Stir-Fried King Crab Leg In Garlic & Light Soy Sauce (AUD $49 / SGD $51.40) is a luxurious meal. The meaty king crab legs are cracked by the chef, making it easy for diners to remove the delicate, sweet savoury crab meat within. Best shared, as this dish is both rich and filling. The light soy sauce lends a delicate salty flavour, but does not overwhelm the natural taste of the crab. Good!
