Description:
Fish Head Curry is a dish which originated in Kerala, and modified by a Singaporean chef, where the head of a fish, usually a red snapper / ikan merah, is cooked in a spicy curry gravy along with vegetables, and served with either rice or bread. There are 2 different variations of Fish Head Curry in Singapore.


Fish Head Curry (Indian) generally consist of more spices, such as cumin seeds, powdered turmeric, powdered coriander, fenugreek seeds, ginger, garlic, onions, cinnamon, salt, tomatoes, coconut milk, mustard seeds, chili, orka / lady's fingers, eggplant, curry powder and curry leaves.

Fish Head Curry (Chinese) consists of the same ingredients, with the addition of tamarind paste / asam, and the omission of curry powder and curry leaves, which results in a thinner and more sourish curry gravy.

Fish Head Curry, while born out of scarcity, is today considered a premium dish.
