Born from an experimental idea of George Bukhov-Weinstein, Ilya Demichev, and Misha Zelman, Burger & Lobster first opened in a pub in Mayfair, West End, London, England, in December 2011, retailing only 2 items on the menu - a burger, and a lobster roll. Since that humble beginning, Burger & Lobster has grown internationally, spawning many imitators across various countries, all trying to emulate their successful recipe of delicious hearty burgers and fresh succulent lobsters at affordable prices. The secret of their success? Custom-built lobster tanks that replicate the natural ocean environment, resulting in happy lobsters. Burger & Lobster opened in Singapore in May 2019.
Ambience at Burger & Lobster in Jewel Changi Airport isn't the most ideal dining experience during the day, where the merciless heat of the sun makes it really uncomfortable despite the air-conditioned environment. Much better in the evening, where the upper-tier seats offer a decent view. Furnishings are moderately comfortable, though I felt the open dining tables were better compared to the slightly cramped booth seats.
Service at Burger & Lobster befits a proper fine-dining restaurant. Staff accord each table personalised attention, greeting guests politely, and carrying out requests efficiently. On a particular visit, they helped store some items we bought, and remembered to return it to us when we left. They display good product knowledge, and patiently talk through order choices with customers. Cleaning up is done quickly, as there is usually a long queue for tables.
Food at Burger & Lobster is American style cuisine, specifically focused on burgers and lobsters. There's only a small variety for each, ranging from 3 - 5 types of burgers, and 2 - 4 different ways of preparing the lobsters. However, these are consistently well executed and delicious. Because they use fresh live lobsters, you're assured of quality. Portions are large for individuals. Prices command a premium, naturally. Budget about SGD $52 per person for a meal here.

The B&L Pineapple Iced Tea (SGD $9) features a blend of black tea, pineapple juice, lemon juice, and palm sugar. This gives it a sticky, earthy tangy zesty sour sweet flavour, which is refreshing, but may not appeal to all. I like the Singaporean serving style, in a transparent plastic bag hung on a stand, but this also makes it difficult to reposition on the table.

The Beer Asahi Super Dry (SGD $12) is a Japanese pale lager, brewed by Asahi Breweries in Tokyo, within the Kanto region of Japan. This bright, clear golden yellow brew has a tame aroma of hops, grass, corn, and apples, with a smooth, refreshing, medium body and medium carbonation. Taste is floral bitter sweet, with notes of wheat, rice, malted barley, and lemon citrus, with a super dry, crisp finish. Very drinkable.

The Original Combo Lobster Roll Set (SGD $145 for 2 pax) is the more luxurious set meal here, and it feeds between 2 - 4 people. Served with 2 lobster rolls, 1 whole lobster (choose between grilled or steamed), 1 fries, and 1 house salad. For the price, it's good value for money.

The House Salad (SGD $6) features a mixture of fresh leafy vegetables (spinach, chard, lettuce) and crisp red onions, with delicate vegetal sweet flavour, dressed in a tangy sharp sour balsamic vinaigrette. Great as part of a set meal to accompany, but not worth ordering ala-carte. Good!

Made for vegetarians, The Impossible Burger (SGD $25) features a thick, juicy impossible meat patty, sandwiched with creamy guacamole, crunchy kale lettuce, juicy tomato, and chunky red pepper coulis, between 2 fluffy soft pumpkin brioche burger buns studded with sunflower seeds. There's an option to include or remove the crisp red onions and soft American cheese. Bite in and you get a big burst of flavour, vegetal meaty sweet savoury earthy salty nutty all at once. Incredibly satisfying, even for regular meat-eaters. Good!

Named for the area in London, England where the brand was established, The Mayfair Burger (SGD $25) features a thick, juicy minced Nebraskan beef patty, grilled to your choice of doneness. Sandwiched with crunchy iceburg lettuce, juicy tomato, crisp red onions, soft dill pickles, and creamy signature house burger sauce, between 2 fluffy soft brioche burger buns studded with black and white sesame seeds. Bite in and you get a big burst of flavour, meaty savoury sweet salty vegetal sour all at once. Straightforward but really satisfying, with a decadent feel. Good!

A live whole lobster, large and fresh, is used for the Lobster Grilled (SGD $65). Perfectly done, with a bouncy succulent juicy chew to texture, and delicate sweet briny salty savoury smoky flavour. Meaty and addictive. Served with a rich, creamy garlic butter sauce and a lemon wedge on the side, which I feel is optional, as the lobster is great tasting on its own. Highly recommended!

Delicate and addictive. Served with a rich, creamy garlic butter sauce and a lemon wedge on the side, which I feel is optional, as the lobster is great tasting on its own. Highly recommended!

Loved the Original Lobster Roll (SGD $40), which features generous chunks of bouncy succulent juicy diced lobster, coated in creamy Japanese mayonnaise, stuffed within a crisp toasted brioche bread roll, garnished with chives and lemon juice. Looks so beautiful when presented, and so easy yet messy to eat. Bite in and you get the lovely creamy milky sweet briny salty flavour from the marinated lobster chunks, followed by the buttery smoky bready sweet notes of the bun. Excellent rendition, I crave more. Highly recommended!

Update Sep-2020: Oddly, a meetup amongst friends for high tea ended up at Burger & Lobster, which isn't exactly known as a high tea place. Perhaps that's why it was fortunately quiet, even despite the ongoing COVID-19 pandemic. Here at the Burger & Lobster Raffles Hotel outlet, the ambience, service, and food differs from the Jewel Changi Airport outlet. The concept resembles a classy gastrobar, with earthy warm diner ambience, while the service is inattentive and slow. The menu has more options available, but food quality is as good as always, with ingredients being fresh, and portions sizes medium large and hearty. Prices remain at a premium.

The Cocktail Bellini (SGD $10 Happy Hour Only) features a blend of peach puree, and prosecco or sparkling wine. It has a lively refreshing fizzy texture, with bold fruity sweet flavour.

The Sweet Potato Fries (SGD $7) feature thick cut strips of fluffy soft sweet potato fries in a basket, best eaten quickly as it's served piping hot. Has lovely earthy sweet savoury flavour. Worth ordering!

The Salted Egg Yolk Baby Squid (SGD $12) has chunks of bouncy whole baby squid, coated in a crisp salted egg yolk batter, spiced with curry leaves and red chili. The result is a bold savoury salty sweet flavour to the appetizer, with hints of spice. Rather addictive. Good!

The Lobster Rosti (SGD $18) is a small plate with a base of crisp stringy rosti potato, having robust salty starchy savoury flavour. It's rather oily. Topped with creamy spiced guacamole with earthy vegetal sweet spice flavour, and succulent chunks of fresh bouncy deshelled lobster meat with bright natural sweet briny salty flavour. Some lime juice and dollops of basil pesto complete, lending tangy zesty sour herbal earthy vegetal notes. Good!

The Lobster Thermidor Set (SGD $31 Half Lobster) features half of a fresh Canadian lobster, tossed in a creamy button mushroom sauce, and gratinated with parmesan and cheddar cheese. Cut in, and you can the gooey tender cheese and mushrooms with milky earthy sweet savoury salty cheesy flavour, followed by the bouncy chunks of lobster with clean-tasting sweet briny salty flavour. Served with crisp Garlic Toast, which has smoky herbal spice buttery bready sweet flavour. Highly recommended!
