Opening in June 2023 as the in-house restaurant of the Mondrian Singapore Duxton hotel, Bottega Di Carna is a modern Italian restaurant offering an elegant, refined dining experience. Headlined by "The World's Greatest Butcher" and meat maverick Dario Cecchini, with Executive Chef Alastair Clayton and Chef De Cuisine Kenny Huang, Bottega Di Carna offers playful and creative plates that pay homage to the gourmet ingredients used.
Ambience at Bottega Di Carna calls to mind a Wes Anderson film set. Bright natural lights filter through the vast skylight, casting soft diffused light upon the gentle pastel coloured walls, marble-topped tables, and cushioned booth seats. Greenery within and without, quirky cursive fonts in the decorative wall scripts, and rounded mirrors lend the signature feel. A large open bar and open kitchen offers a view of the activity.
Service at Bottega Di Carna befits its status as a fine dining establishment. Staff accord each table personalised attention, demonstrating good product knowledge in describing dishes or beverages. They fulfil requests efficiently, and clean up quickly when diners leave. Great that they engage guests in conversation, and also check during the meal for feedback. Service recovery processes are decently defined and executed.
Food at Bottega Di Carna is modern Italian fine dining cuisine, with a focused menu comprising use of gourmet ingredients. No surprise that meat is a highlight, with exquisite aged cuts of beef flame-kissed by their josper grill. Handmade pastas and inventive appetizers round it out. Portions are sized for individuals but can be shared. Prices are relatively high, budget about SGD $97 per person for a meal with drinks here.

The Beer Lion Brewery Straits Pale Ale (SGD $16) is a pale ale, brewed by the Lion Brewery Co. in Telok Ayer, Singapore. Created specially for the hot equatorial climate, this has a deep amber orange colour, with aromas and tastes of lychee, orange, wheat, and resin. The body is dry, well-balanced, and gentle, carrying fruity grainy bitter sweet flavours, with a refreshing finish.

The Focaccia Bread (SGD $Complimentary) is soft and warm and fluffy, with bready earthy sweet herbal flavour. Dip into some olive oil and black vinegar for added earthy sour kick. Good!

Chef treated us with the dainty Artichoke Tart (SGD $Complimentary) to sample. Within the crisp open pastry shell is piped creamy artichoke heart puree, crumbly parmigiano and goat cheese, juicy caramelised pear, and crunchy artichoke chips. This tasty morsel carries lovely vegetal earthy fruity sweet cheesy milky flavour, though its unique profile is an acquired taste. Good!

The Calamari (SGD $20) was well received, with the crisp outside bouncy inside battered squid rings carrying addictive grainy savoury salty flavour. Paired with a creamy lemon aioli for added milky herbal zesty tangy sour kick. Highly recommended!

The Puglia Burrata (SGD $26) has a base of juicy cherry tomatoes and crisp spinach leaves, lending combined vegetal herbal sweet flavour. The salad is drizzled with balsamic vinegar, lending an earthy sour kick. In the center sits a soft creamy burrata cheese, carrying milky cheesy sweet flavour. Nice. Highly recommended!

The Pumpkin Ravioli (SGD $28) has a lovely golden yellow hue from creamy pureed pumpkin, with tender handmade packets of ravioli stuffed with soft cacioricotta cheese, garnished with sage leaves. The result is a delicious vegetal sweet earthy cheesy herbal savoury flavour, yum. Highly recommended!

The Pici (SGD $28) features thick chewy al-dente strands of hand-rolled pasta noodles, coated in a luscious Tuscan francesina braised beef and tomato gravy, garnished with pecorino romano cheese and chili oil. This results in a robust meaty savoury salty grainy vegetal sweet cheesy spicy flavour, enticing the palate. Good!

The Grilled Stockyard 200-Day Grain-Fed Beef Ribeye (SGD $88 for 300g) features a large cut of Australian black angus beef ribeye, dry-rubbed with the house signature 'Profumo Del Chianti', an Italian herb blend that includes sea salt, bay leaf, thyme, sage, fennel pollen, juniper, rosemary, and lavender. Grilled to your choice of doneness (we opted for medium rare), the beef is succulent, tender, and juicy, with bold meaty savoury salty herbal flavour. Served with a side of grilled eggplant, which is soft with vegetal earthy herbal salty sweet flavour. Highly recommended!

The Varlhona Chocolate Fondant (SGD $22) features a base of soft crumbly chocolate fondant with a gooey chocolate center, topped with a crunchy cocoa nib tuile, and a creamy scoop of vanilla ice cream. The fondant and tuile carries bold chocolatey bitter sweet earthy flavour, complemented by the milky floral earthy sweet notes of the ice cream. Highly recommended!

The Butterscotch Budino (SGD $18) was excellent. A crisp crunchy sesame brittle with smoky nutty candied sweet flavour covers the top, crack through to reveal a luscious caramel coated custard pudding resplendent with vanilla and butterscotch flavour and coated with chocolate crumble and more sesame brittle, sticky wobbly soft crumbly in texture with candied earthy milky chocolatey sweet flavour. A touch of edible gold leaf lends sophisticated luxury. Highly recommended!

Loved the Lemon Givré (SGD $18), which reminded me of a deconstructed citron tart. Within a hollowed lemon half served over ice, is placed wobbly gelatinous cubes of prosecco jelly, topped with creamy thick torched lemon cream. With bright zesty tangy sour sweet bitter earthy boozy flavour, this was refreshing and intense. Kept reaching for more. Highly recommended!
