The Millennium Hotels And Resorts (MHR) group has launched its own house label of wines and craft beer, available exclusively at its 6 Singapore properties, including Orchard Hotel, Grand Copthorne Waterfront Hotel, M Hotel, Studio M Hotel, M Social, and Copthorne King’s Hotel. The launch party saw the group come together, with the executive chefs of each hotel curating a special menu of dishes to pair with the new line of wines and craft beer.

We were invited to the Launch Of M Wines & M Brew 2019, where Millennium & Copthorne Hotels plc ("M&C") Group interim Chief Executive Officer (CEO), Mr Tan Kian Seng, shared how offering their own house label would create a more refined, memorable gastronomic experience for guests. Mr Andy Wong, Vice President Food & Beverage Asia of Millennium Hotels and Resorts also shared how the creation of their house wines is a reflection of their philosophy in delivering the best experience for customers.

The M Wine Cabernet Sauvignon (SGD $58 per bottle, $12 per glass) is a 2018 red wine vintage made with 100% cabernet sauvignon red grapes, hand-picked from Buronga Hill Estate in Mourquong, Riverina, New South Wales, Australia. It has a deep crimson red colour, with aromas of black cherry, cloves, cinnamon, and chocolate. The body is full, rich, and velvety, with tastes of blackberry, cherry, oak, and vanilla bean. It has a bold fruity earthy sweet flavour, with a rich, lingering finish. Best paired with red meat, roasts or grills, and dishes with heavy sauces.

The M Wine Sauvignon Blanc (SGD $58 per bottle, $12 per glass) is a 2018 white wine vintage made with 100% sauvignon blanc green grapes, hand-picked from Buronga Hill Estate in Mourquong, Riverina, New South Wales, Australia. It has a delicate lime green colour, with aromas of passionfruit, honeydew melon, asparagus, and bell pepper / capsicum. The body is crisp, zesty, and refreshing, with tastes of green apple, peach, morning dew, and grass. It has a bold fruity vegetal sweet flavour, with a clean, lively finish. Best paired with white meat, seafood or carbohydrates,and dishes with light sauces.

Curated by The Orchard Cafe at Orchard Hotel, the Charcoal Grilled Wagyu Beef Burger (SGD $30) is best paired with the M Wine Cabernet Sauvignon. The burger is tender and juicy, with a bold savoury salty meaty flavour. I felt the patty would be more satisfying if it were slightly thicker.

Sampled 2 dishes curated by Beast & Butterflies at M Social. The Crispy Pork Knuckle & Sauerkraut (SGD $26 / $36) has a satisfying loud crunch to the crispy crackling pig's skin, with moist chewy pork knuckle meat that has deep savoury salty flavour. The Crab Patties (SGD $14) have a delicate crunch, with lovely sweet savoury flavour of the crab meat. The former is best paired with the M Wine Cabernet Sauvignon, while the latter is best paired with the M Wine Sauvignon Blanc.

Curated by Hua Ting Restaurant at Orchard Hotel, the Crispy Roasted Duck (SGD $85) has a lovely smoky aroma, with a delicate crisp crunch to the fatty duck skin. The duck meat is tender with a light chew, juicy and savoury sweet salty in flavour. Served with a tart sour plum sauce. Best paired with the M Wine Cabernet Sauvignon.

Curated by Grissini at Grand Copthorne Waterfront Hotel, the Josper Grilled Octopus (SGD $42) was skewered with a large, bouncy morsel of octopus, along with roasted baby potato and sun-dried cherry tomato. This has a soft chew, with delicate sweet smoky vegetal flavour. Best paired with the M Wine Sauvignon Blanc.
