Refurbished and opening in August 2015, the Pool Grill at the 5th floor of the Singapore Marriott Tang Plaza Hotel is an intimate dining haven, located next to the hotel's swimming pool, and offering a partial view of the nearby shopping district. More beautiful and romantic by night, the Pool Grill is a decent choice for a mid-range romantic meal. Was her birthday, so decided to visit as we had a gift certificate.
Ambience at Pool Grill benefits from its location next to the hotel's swimming pool, with a partially open view of the skyline and surrounding district of Orchard Road. The limited seating also lends well to intimate meals. A mix of warm lights and streaks of blue cove lights lend a cozy feel, while the sleek white tablecloths, comfortable cushioned chairs, and neatly laid tables lend a sophisticated yet elegant vibe.
Service at Pool Grill lives up to fine dining restaurant standards, as it should. Staff are polite and welcoming, knowledgeable on the menu, and able to make recommendations. They check for dietary restrictions, and perform service recovery well, not questioning the guests, but doing their best to meet the request. They also efficiently request to clear away plates when guests are done eating, before serving the next course.
Food at Pool Grill is Modern European, with Chefs Christian Frigo and Daniele Trivero helming the kitchen. Using fresh seasonal ingredients, they serve up well-executed, visually pleasing, delicious plates that are comforting and familiar in flavour, yet feel exciting. Portions are sized for individuals. Prices are upper mid-range, befitting of a hotel restaurant. Budget about SGD $100 per person for a meal here. Advance reservations are recommended.

A bubbly glass of Prosecco, feels so luxurious to slowly sip it by the pool, while watching the city lights. This meal was a fixed 3-course dinner with 2 glasses of prosecco, priced at SGD $100 per person.

The Fresh Shucked Oysters On The Rocks feature a half dozen fresh oysters, served over a mound of ice, along with mignonette sauce and half a lemon. The oysters are plump, slippery, and juicy, with bright briny salty sweet flavour.

A house signature, the Seared Lamb Loin features 2 thick cuts of lamb loin coated in mushroom duxelle, a quenelle of foie gras pâté, a quenelle of mushroom zabaione, grilled garlic cloves, and croutons. Inspired by a traditional beef wellington but without any puff pastry, the lamb is meaty, tender, and juicy, yielding easily when bit. Because of the light mushroom crust, the lamb doesn't have any gamey taste, instead being boldly meaty savoury in flavour. The creamy smooth mushroom zabaione has bold earthy flavour, and complements the lamb. The dense grainy foie gras pâté lends deep savoury salty earthy flavour, while the tender grilled garlic cloves have smoky spice notes, and the crisp bread croutons round it off nicely. Highly recommended!

The Raspberry Sorbet is creamy smooth in texture, with a bold sour sweet flavour. With 2 scoops of this sorbet, the strong raspberry flavours got a little intense on the palate. Would have liked something to cut through and offset this.
