Opening in April 2023 and operated under the Seorae Korean Charcoal BBQ Group, headlined by founder Chef Chul Park, the Bulgogi Syo restaurant concepts represents their 'Art Of Fire', bringing together tableside flambés, sizzling hot stones, huge fire blasters in an open kitchen, and exquisitely marinated cuts of fresh meat. With tantalising plates presented with professional showmanship, it's little wonder Bulgogi Syo has attracted long queues.

Ambience at Bulgogi Syo channels their concept, being spacious, open, and with a modern elegance. The dark shades are interspersed with bright warm lighting, and the sturdy furnishings and comfortable booth seats are decent. The open kitchen offers a view of the action, particularly when staff break out the massive fire blasters. Dancing flames on the LED screens around the pillars complete the vibe.

Service at Bulgogi Syo is polite and respectful, with staff checking in on diners to ensure that everything is well. They display good product knowledge, able to describe dishes adequately. Staff also play in key role in the overall experience through performing tableside flambés for selected dishes. I note they work quickly to fulfill orders, and clean up efficiently when diners leave.

Food at Bulgogi Syo is exciting Modern Korean cuisine, focused on fresh barbecue featuring well-marinated cuts of beef and pork. They have a unique 3-step grilling process. Firstly, prime cuts are seared to perfection on 180-degree celsius hot stone pans, locking in the natural juices and flavours into the meat. Secondly, powerful fire blasters are used to flame torch the meats, resulting in a beautiful char to the surface. Thirdly, the meats are served on a hot stone plate, doused with the house sauce and flambéed tableside to complete. Ingredients are fresh, and quality is consistent. Portions are medium sized for individuals. Prices are reflective of a typical restaurant, budget about SGD $38 per person.

The Beer Terra (SGD $6.90) is a pale lager brewed by the Hite Brewery in Yeongdeungpo district, Seoul, Sudogwon region, South Korea. It has a clear golden colour, with aromas of white rice, cereal, grass, and barley. The body is lively, crisp, and light, with a soft white foam head, and tastes of wheat, spring water, white bread, and corn. It has a gentle grainy bitter sweet flavour, and works as an excellent palate cleanser, though its natural carbohydrate content is slightly higher.

A small range of Banchan / Side Dishes (SGD $Complimentary) to accompany. The Kimchi Baechu / Kimchi Pickled Cabbage is crisp juicy, with bright vegetal sweet sour spicy flavour. The Kkakdugi / Pickled Daikon Radish is crunchy juicy, with sharp vegetal sweet sour flavour. The mellow Gamja Makaloni Saelleodeu / Potato & Macaroni Pasta Salad is soft tender, with starchy grainy sweet savoury milky flavour. The Gimgaru Bap / Seaweed Rice was surprisingly delicious, soft moist with addictive grainy earthy vegetal sweet nutty flavour. Highly recommended!

An overall decent Soondubu Jjigae Haemul / Silken Tofu Stew With Seafood (SGD $18.90), with the warm soup / broth carrying robust savoury salty eggy sweet spicy flavour. Packed with ingredients, including soft chicken egg, wobbly silken tofu beancurd, tender zucchini, bouncy squid rings, fresh succulent shell-on prawns, and crunchy golden mushrooms, all of which pick up the lovely flavours of the soup / broth. Good!

The Beikeon Kongnamul Pajeon / Bacon Bean Sprouts Pancake (SGD $15.90) is a unique and interesting creation. Studded within the crispy pancake are crunchy bean sprouts and chewy strips of pork bacon, resulting in a grainy meaty vegetal salty sweet savoury flavour. Served with a sesame, soy, and chili dipping sauce on the side, for added salty spicy kick. Worth ordering!

The Tteokbokki Gimmari / Rice Cakes With Deep-Fried Seaweed Roll (SGD $17.90) comprises chewy dense tteokbokki / ddukbokki / rice cakes, tender eomuk / fish cakes, crunchy gimmari / deep-fried seaweed rolls (which are stuffed with sweet potato cellophane noodles, spring onions, and sesame oil), and gooey mozzarella cheese, in a warm gochujang / fermented chili paste gravy. Combined, this carries bright sweet savoury salty spicy vegetal earthy cheesy flavour, yum. Good!

The Nakji Bokkeum / Stir-Fried Spicy Octopus (SGD $25.90) has chunks of chewy baby octopus, tender white onions, and crisp spring onions, in a piquant gravy that's savoury sweet spicy in flavour. Lovely smoky aroma, though the heat is just sufficient to tingle the palate, without much burn. Worth ordering!

The Bulgogi / Marinated Beef (SGD $27.90) is set aflame tableside, creating a beautiful smoky tantalising aroma. The choice USDA grade oyster blade beef is marinated bulgogi style, tender with a light chew, carrying smoky meaty sweet savoury flavour. Served over a bed of tender white onions with vegetal sweet earthy salty flavour, topped with a wobbly soft chicken egg which carries eggy sweet flavour. Accompanied by tender zucchini with vegetal sweet flavour, crisp juicy kimchi baechu / kimchi pickled cabbage with bright vegetal sweet sour spicy flavour, and soft pumpkin with mellow vegetal earthy sweet flavour. I only wish the portion size was larger though. Good!

The premium LA Galbi / Los Angeles Style Marinated Beef Short Ribs (SGD $39.90) is set aflame tableside, creating a beautiful smoky tantalising aroma. The choice USDA grade beef short ribs are marinated overnight, coming off the bone with some effort, tender and chewy with robust smoky meaty sweet salty savoury flavour. Served over a bed of tender white onions with vegetal sweet earthy salty flavour. Accompanied by tender zucchini with vegetal sweet flavour, crisp juicy kimchi baechu / kimchi pickled cabbage with bright vegetal sweet sour spicy flavour, and soft pumpkin with mellow vegetal earthy sweet flavour. Highly recommended!
