Description:
Root Beer Float is a popular dessert beverage, originating from America. In Singapore, it was introduced by the now defunct A & W Restaurant, a fast food outlet.


Root Beer Float only comprises 2 ingredients, namely, the soft drink / carbonated drink Root Beer, and vanilla ice cream. The soft drink Root Beer derives its name from the primary ingredient used to make it, which is sassafras root.

Besides sassafras root, other ingredients that go into the making of Root Beer may include wild sarsaparilla, sweet sarsaparilla, honduran sarsaparilla, artificial sassafras root, wintergreen, piper auritum / root beer plant, liquorice root, sweet birch, black birch, black cherry, red spruce, black spruce, sitka spruce, dandelion root, burdock root, yuca root, soapbark, allspice, chocolate, nutmeg, fenugreek seeds, cinnamon, cassia, fennel, clove, tolu balsam, balsam fir, sugar, ginger, star anise, anise, mint, hops, malted barley, st. john's wort, molasses, acacia, honey and yeast.

Traditionall, the exact mix of ingredients that go into the making of a root beer is a closely guarded secret of the various soft drink manufacturers, and isn't publicly available.

In Singapore, Root Beer Float isn't a street food, rather, it is typically sold in mid range cafes / bistros / fast food outlets that are American inspired. As such, there aren't many stalls that sell Root Beer Float, which causes Singaporeans to sometimes seek out this dessert beverage when travelling overseas.

As Root Beer is a mass produced, readily available soft drink, the quality of Root Beer Float is quite consistent. The determining factors for a good Root Beer Float are instead size, serving method, and quality of the vanilla ice cream.

Therefore, a good Root Beer Float should be served in at least a 250 millilitre mug, although a 500 millilitre mug is preferable. The mug should be chilled beforehand, which gives it a frosty appearance, and preserves the coldness of the vanilla ice cream for a longer period of time. The scoop of vanilla ice cream should be generous, with a milky and creamy texture.

Some stalls may choose to substitute root beer for another soft drink, typically a clear fizzy soda, or a fizzy cola. In such cases, the dish is known as a Soft Drink Float instead.
