Description:
Prawn Noodles is a Hokkien dish that has many variations around Southeast Asia. It is different from the Singaporean Hokkien Mee.
Prawn Noodles consists of yellow egg noodles or thin rice vermicelli noodles (Bee Hoon), typically garnished with bean sprouts, water spinach leaves (Kang Kong), fried shallots and prawns.
Some hawkers may also include lean pork slices / pork ribs, fish cake, prawn cake, hard boiled eggs or pork lard.
Prawn Noodles can be served in a soup / broth, or dry in a sauce.
When Prawn Noodles is served dry, the noodles are tossed in a sauce made from vegetable oil or lard, light soy sauce, garlic, chili powder and chili paste (Sambal). A small bowl of prawn soup / broth is served together.
The soup for Prawn Noodles is made from a prawn stock. The ingredients for the prawn stock are boiled together, and typically include water, prawn shells, shallots, garlic, pepper, salt and pork lard. Better quality prawns result in a tastier stock.
Some hawkers may also include pork bones, pork lard, light soy sauce, dark soy sauce, star anise, cloves, dried anchovy fish (Ikan Bilis), onions, chicken stock or crabs. However, while adding more ingredients enhances the prawn stock, it also means a less 'pure' prawn stock.
A good Prawn Noodles should have a concentrated, savoury sweetness of fresh prawn taste in the soup. The prawn flesh should be firm and juicy. The noodles should be nicely tossed, and separate easily, while the bean sprouts should be fresh and crunchy. If pork ribs are included, the meat should be tender and come off the bone easily.
