Description:
Popiah is a type of fresh spring roll that has been localized by Singaporean Teochews, Hokkiens and Peranakan Chinese.
Popiah is wrapped with a soft, paper thin 'skin' made from wheat flour. Some hawkers make the 'skin' from eggs instead.
The stuffing for a Popiah typically consists of steamed / stir-fried white chinese radish (Daikon) / turnip shreds, grated carrots, french beans, lettuce leaves, bean sprouts, shredded egg omelette, fried shallots, finely chopped peanuts and thinly sliced fried tofu puffs.
Some hawkers also include pork lard, sliced chinese pork sausages (Lup Cheong), shrimp or crab meat.
A few sauces are used in Popiah. This includes light soy sauce, dark sweet soy sauce, black bean sauce, seafood hoisin sauce, shrimp paste (Belacan) or a spicy garlic chili sauce.
A good Popiah should have light, thin skin that doesn't break apart easily. It should be tightly packed, and the sauces should not overwhelm the freshness of the ingredients. It should taste sweet, spicy and savoury, while the texture has to be both chewy and crunchy at the same time.
Popiah is often eaten as a light snack, or as a side dish.
