Description:
Seafood Soup is a Teochew spin-off from the dishes Fish Soup and Fish Porridge, and is typically also sold by stalls specializing in Fish Soup and Fish Porridge.
Seafood Soup has various types of seafood, served in a bowl of soup, garnished with tomatoes, spinach, lettuce, chinese broccoli (Kai-Lan), silken tofu and seaweed.
Typically, the type of seafood used in Seafood Soup includes sliced spanish mackerel fish (Batang) / giant snakehead fish (Toman), squid / calamari, giant tiger prawns and crabstick. Some hawkers also include clams, mussels, or crab meat.
The broth for Seafood Soup is made with fish bones, salt, ginger slices and pepper. Sometimes, chinese rice wine, wolfberries, chicken stock, pork bones, prawns, crabs, preserved vegetables or anchovy fish (Ikan Bilis) are also included.
A good Seafood Soup must have fresh seafood and vegetables. The sliced fish and prawns should be firm, and lend a natural sweetness to the soup. Seafood Soup is normally served together with a bowl of plain white rice.
Despite the simplicity of preparation, Seafood Soup isn't a typical popular dish in Singapore, and very few stalls that do sell it often take shortcuts, or don't get it right. This, together with the normally high / premium prices that seafood command, mean that Seafood Soup is rather uncommon.
