Description:
Thosai is a popular Indian bread / pancake, from South India. It is debatable if Thosai first originated in Tamil Nadu, Karnataka or Kerala.

Thosai is made with black gram bean flour (Vigna Mungo / Urad), plain white rice / white rice flour, salt, oil / clarified butter (Ghee), water and fenugreek seeds.

The Thosai paste is then left to ferment / rest for awhile.

To cook, the Thosai paste is spread thinly on a hot griddle, in a circular shape, and sprinkled with clarified butter (Ghee). It is flipped to cook both sides till the crust is nearly dry, and folded into either a triangular shape or a cone shape before serving.

While Thosai can be eaten plain (Plain Thosai), it can also be stuffed with 1 main ingredient. Common ingredients used include butter (Butter Thosai), mashed spiced potatoes with onions / masala (Masala Thosai), egg (Egg Thosai), onions (Onion Thosai) or a combination (Egg & Onion Thosai, Masala Egg Onion Thosai).

A good Thosai should have a light, crisp crust, while still being soft and fluffy inside. It should not be too sourish. If an ingredient is included, it should be liberally stuffed and evenly cooked.

Thosai is often eaten for breakfast, and is accompanied by a wide variety of chutneys and pickles. Some common types of sides served with Thosai in Singapore include wet chicken curry gravy, coconut chutney, Dhal and Sambar.
