Description:
In Singapore, Roast Meats refers to a stall selling Cantonese style roasted meat. A Roast Meats stall will typically have 2 types of roast pork, namely Char Siu / Marinated Barbecued Pork and Siu Yuk / Roast Pork Belly, as well as roast duck, taiwanese pork sausages (Xiang Chang), chinese pork sausages (Lup Cheong) and braised hard boiled eggs.
Char Siu / Marinated Barbecued Pork typically uses either cuts of pork loin, pork shoulder, pork collar, pork belly or pork butt. These are cut into strips, and marinated with honey syrup, garlic, chinese 5-spice powder, sugar, shaoxing wine / chinese rice wine / sherry, dark soy sauce, light soy sauce, red fermented tofu and seafood hoisin sauce.
Some hawkers also include oyster sauce, pepper, soy bean paste, sesame oil or red food colouring. The Char Siu / Marinated Barbecued Pork is then skewered and long 'forks', and roasted in an oven / over charcoals.
This gives Char Siu / Marinated Barbecued Pork a deep red / brown colour, with a nice char from caramelisation. The meat should be firm, with a bit of juice, and a slightly sweet taste.
Siu Yuk / Roast Pork Belly uses pork belly cuts, which is then dry rubbed with chinese 5-spice powder, salt and pepper. The meat is then roasted, and white vinegar is brushed onto the skin.
This gives Siu Yuk / Roast Pork Belly a salty, savoury taste, and crispy skin. The meat should be firm, with a bit of juice.
A Roast Meats stall will serve Char Siu / Marinated Barbecued Pork and Siu Yuk / Roast Pork Belly with plain white rice, sliced cucumbers, shrimp paste (Belacan) and a spicy chili sauce.
