Description:
Chwee Kueh is a Hokkien dish. It consists of steamed, round rice cakes, topped with diced fried preserved radish (Chye Poh).
The rice cake for Chwee Kueh is made with white rice flour, water, salt and wheat starch. The batter is then poured into little round moulds, and steamed. Once done, the rice cake is left to cool. Its resulting shape will be a small bowl like / saucer shape, with a small dimple in the middle where water condensation from steaming collects.
The topping for Chwee Kueh is made by frying diced preserved radish, oil, garlic and pork lard. Some hawkers also add sugar, fish sauce, sweet soy sauce (Kichup Manis), dried shrimp or sesame seeds.
A good Chwee Kueh should be slightly springy and wobbly, and taste savoury, with a slight sweetness.
Chwee Kueh is often eaten for breakfast, or as a snack. Chwee Kueh is served with a spicy chili sauce.
