Description:
The Traditional Singapore Breakfast refers to a 'set meal', consisting of Toast, Eggs and a Drink. This Traditional Singapore Breakfast is often credited as originating from the Hainanese, and is unique to Singapore.


The first component of the Traditional Singapore Breakfast is Toast. This is often thinly sliced plain white bread / brown bread, that is then grilled or toasted till crisp, but not burnt, with a fragrant aroma. The Toast is then spread with a variety of toppings, most of which usually include a thin slab of butter (Toast Butter / Butter Toast).

The most popular pairing of toppings is kaya and butter (Toast Kaya Butter / Kaya Butter Toast / Kaya Toast / Toast Kaya). Kaya is a type of pandan coconut egg jam, made with coconut milk, duck eggs / chicken eggs, sugar, and flavoured with screwpine leaves (Pandan). This makes kaya smooth, sweet and creamy, with a fragrant pandan aroma. Kaya is normally golden brown or green in colour.

Another popular pairing of toppings is sugar and butter (Toast Butter Sugar / Butter Sugar Toast / Sugar Toast / Toast Sugar). The type of sugar used is typically coarse white sugar, or coarse brown sugar, with visible sugar crystals.

Less common are the western influenced Toast, such as Toast Peanut Butter / Peanut Butter Toast, which consists of butter and chunky peanut butter. Or Toast French / French Toast, which consists of bread dipped in beaten eggs. The most uncommon version is Toast Cheese / Cheest Toast, which uses a slice of American cheese / processed cheese. Also, marmalade of any kind is never used as a spread.

The second component of the Traditional Singapore Breakfast is Eggs. Normally, only 2 eggs are used; no more, and no less. The eggs are submerged in boiling water for between 3 to 5 minutes, till the egg white is completely opaque, but still runny, and the yolk hasn't hardened. These Soft Boiled Eggs / Half Boiled Eggs are consumed with a dash of dark soy sauce and pepper. Traditionally, the eggs are cracked into a saucer, and slurped from the edge of the saucer.

The third and final component of the Traditional Singapore Breakfast is a Drink. Normally, this means either a hot or cold version of the Singaporean style Coffee (Kopi) or Tea (Teh). There are several variations on each, which denote the amount of condensed milk, evaporated milk and sugar used. Other drinks include Milo, Horlicks or Barley. Soft drinks are never consumed together with the Traditional Singapore Breakfast.

Beyond the food, the Traditional Singapore Breakfast is also a cultural institution of Singapore. It is a considered a time when people can get together and discuss issues, whether it be personal, business, religious, political, social or more. Furthermore, the setting and ambience in which the Traditional Singapore Breakfast is consumed is also important, it has to look and feel like an authentic heartlands coffee shop.
