Vegetable Fry is a term that refers to a dish of Tamil Nadu or Karnataka, South India origin that consists of 1 type of vegetable, fried in spices till crispy.
Generally, only firm, non-leafy vegetables are used for Vegetable Fry. So a Vegetable Fry could use okra / Lady's Fingers (Bhindi Fry / Okra Fry), bitter gourd (Hagalakayi Fry / Bitter Gourd Fry), or cauliflower (Gobi Fry / Cauliflower Fry).
Regardless of the type of vegetable used, the spice mixture used for Vegetable Fry is the same. It consists of oil, mustard seeds, cumin seeds, curry leaves, powdered turmeric, garlic, ginger, salt, chili, pepper, cloves, cinnamon sticks, cardamom, powdered asafoetida / asafetida, powdered coriander and garam masala.
The 1 type of vegetable of choice is then fried together with the spices till crisp. Some hawkers also include onions or tomatoes.
Vegetable Fry is garnished with coriander leaves, and served with Indian breads or rice.
