Description:
Satay is a Malay Indonesian dish, which consists of skewers of marinated meats, grilled and served with a peanut sauce, sliced cucumbers, sliced onions and boiled compressed rice cakes (Ketupat).
Types of meat commonly used in Satay include chicken, mutton (goat), mutton (sheep) and beef (Malay) or pork (Chinese). Some hawkers also have beef intestines, beef stomach (Tripe), chicken skin, prawns or duck.
The marinade for Satay is made by grinding fried shallots, garlic, ginger, pepper, cumin seeds, coriander seeds, fennel seeds, salt, sugar, powdered turmeric and shrimp paste (Belacan). The meat of choice is then marinated in the ground spice mixture.
While grilling, the Satay is basted with oil, traditionally using a basting brush made from a stalk of lemon grass. This gives the Satay an additional fragrance.
The peanut sauce for Satay is made with peanut oil, fried shallots, garlic, candlenuts, ground peanuts, water, sugar, salt, onions, chili, lemon grass, shrimp paste (Belacan) and tamarind paste. Some hawkers also include pureed pineapples.
A good Satay will be thick and meaty, evenly cooked with a slight char, and a fragrant aroma. The peanut sauce should be thick, slightly sweet, with chunks of ground peanuts.

Satay hawkers tend to congregate in groups, otherwise known as 'Satay Clubs'. This means you'll rarely find 1 lone Satay stall by itself, and it also means most of the good Satay stalls tend to be in specific areas in Singapore.
