Description:
Butter Chicken is thought to have be invented in Delhi, North India, by a Punjabi chef. It traditionally consists of chunks of pre-marinated chicken, usually Tandoori Chicken, in a smooth, mild curry.

The deboned chicken in Butter Chicken is first marinated with a mixture of plain yoghurt and tandoori masala, then roasted in a tandoor oven.

Some variations grill or pan-fry the chicken instead.

The curry for Butter Chicken is made with melted butter, salt, onions, garlic, powdered cumin, cloves, chili, powdered turmeric, cinnamon sticks, powdered coriander, ginger, pepper, fenugreek leaves, tomato puree and fresh cream.

Some hawkers may also add cardamom seeds, bay leaves, sugar, chicken stock, cashew paste or almond paste.

The pre-marinated chicken and curry are combined, and cooked until done. A good Butter Chicken will have a smooth, buttery, mild curry, which complements rather than overwhelms or disguises the chicken meat. The chicken should have a hint of smokiness, while being slighly chewey, without being overly spiced or dry.

Butter Chicken is often served accompanied by Indian breads or rice.
