Description:
Lontong is a malay dish made from boiled compressed rice cakes (Ketupat), in a mild coconut vegetable curry (Sayur Lodeh).


The first component of Lontong is the boiled compressed rice cakes (Ketupat). Made by packing rice into a banana leaf, and then boiling it, this imparts a fragrance to the rice.

The rice cakes are then cut into cubes, and the vegetable curry poured over it before serving.

The second component of Lontong is the mild coconut vegetable curry (Sayur Lodeh). This is made by stewing cabbage, carrots, turnip, chinese firm dry tofu, long beans, water, coconut milk, chili, shrimp paste (Belacan), onions, garlic, ginger, lemon grass, candlenuts, yam beans, dried shrimp, powdered turmeric and powdered cumin.

Once cooked, hard-boiled eggs, a spicy chili paste (Sambal) and grated coconut is added.

A good Lontong should be smooth, and the mild curry slightly grainy with bits of shrimp and coconut. The vegetables should be soft and tender, not overcooked or wilted. The rice cakes should be tightly packed, and slightly firm to the touch.

Lontong could be considered somewhat healthy, as it is primarily a vegetable-based dish, provided you don't indulge in too much of the coconut curry!
