Description:
Fried Oyster Omelette is a Teochew dish made from frying eggs, oysters, fish sauce and sweet potato flour in hot oil / pork lard.
It is served garnished with chives or coriander, and accompanied by a spicy garlic chili sauce.
A good Fried Oyster Omelette takes great skill to prepare, as the chef has to achieve the right balance of ingredients, and overall texture of the dish.
A Fried Oyster Omelette should have crispy bits of starch and eggs, as well as chewy bits of starch and eggs.
The oysters should be fresh, plump and juicy, not overcooked. And the eggs should be soft and fluffy.
A variation of Fried Oyster Omelette leaves out the sweet potato flour, resulting in a more fluffy and juicy omelette, without any crispy bits for texture.
Fried Oyster Omelette is definitely a very unhealthy dish, and should be eaten in moderation.
