Description:
Mee Goreng is a popular dish consisting of fried yellow egg noodles. While there are many variations on Mee Goreng in Southeast Asia, the term Mee Goreng usually refers to 2 specific variations in Singapore.

Mee Goreng (Indian) is an Indian - Malay / Muslim fusion dish. Mee Goreng (Indian) has a distinctive red colour, due to the use of either tomato ketchup or red food colouring.

Mee Goreng (Indian) consists of yellow egg noodles fried with light soy sauce, dark soy sauce, sugar, salt, garlic, eggs, bean sprouts, sliced red chili, chili paste (Sambal) and tomato ketchup.

This results in Mee Goreng (Indian) being fragrant, spicy, sweet and slightly salty. Mee Goreng (Indian) is usually garnished with lettuce, potato cubes, and chinese firm dry tofu.

Some hawkers also include a fried egg, sliced chicken, minced mutton, squid, spring onions, onions, sliced cucumbers or lime.

Mee Goreng (Chinese) is a Chinese - Malay / Muslim fusion dish. Mee Goreng (Chinese) consists of yellow egg noodles fried with light soy sauce, dark soy sauce, sugar, salt, garlic, eggs, bean sprouts, sliced red chili and chili paste (Sambal).

This results in Mee Goreng (Chinese) being more spicy and less sweet than Mee Goreng (Indian). Mee Goreng (Chinese) is usually garnished with chinese broccoli (Kai-Lan), prawns, fish cake, squid, tomatoes and chinese firm dry tofu.

Some hawkers also include lettuce, spring onions or lime.

Regardless of origin, a good Mee Goreng should have a 'wok hei' / breath of the wok, well fried savoury taste that coats each noodle strand.
