Description:
Fish Soup and Fish Porridge are very popular dishes in Singapore, especially among the elderly. Generally, sliced fish (fresh or fried) is served in a bowl of soup, garnished with tomatoes, spinach, lettuce, chinese broccoli (Kai-Lan), silken tofu and seaweed.


There are 2 main variations on Fish Soup, although today, most stalls sell both versions.

The Teochew version has a clear fish soup, with thin slices of fresh fish.

The broth is made with fish bones, salt, ginger slices and pepper. Sometimes, chinese rice wine, wolfberries, chicken stock, pork bones, preserved vegetables or anchovy fish (Ikan Bilis) are also included.

It is accompanied by rice, or in the case of Fish Porridge, the soup is poured over the pre-cooked rice before serving.

The Cantonese version has a milky-white soup, with thick slices of battered fried fish.

The broth is made with fish bones, salt, ginger slices, and hot oil from frying the fish. It is topped with shreds of fried eggs. Sometimes, chinese rice wine, XO brandy, evaporated milk, condensed milk or anchovy fish (Ikan Bilis) are also included.

It is accompanied by rice, or thick rice vermicelli noodles (Chor Bee Hoon).

The sliced fish (fresh or fried) used in Fish Soup and Fish Porridge is generally a firm, white flesh fish. The most common fish used include spanish mackerel fish (Batang), giant snakehead fish (Toman), pomfret fish or grouper fish.

Fish Soup and Fish Porridge is considered to be a 'healthy' dish, although this is somewhat debatable due to some stalls adding Monosodium Glutamate (MSG).
