Description:
Aloo Gobi is a popular vegetarian curry dish, from Punjab in North India. The main ingredients are potatoes (Aloo), and cauliflower (Gobi).

The curry for Aloo Gobi is traditionally made with curry leaves, ginger, garlic, powdered coriander, cumin seeds, turmeric, and ghee / oil.
This results in the yellowish curry paste, in which the potatoes and cauliflower are lightly fried.

Some hawkers also add tomatoes, red onions, peas, black caraway, powdered mango, mint, fenugreek, or bay leaves. Also, most Singaporean stalls prefer to serve it 'wet' as a curry gravy, rather than 'dry' as a curry paste.
The simplicity of this dish has led to many different versions of Aloo Gobi, and the dish differs from chef to chef.

Traditional Aloo Gobi has a very spicy, intense flavour from the curry coating the potatoes and cauliflower, without any bitter, burnt taste. The potatoes and cauliflower should be soft and tender, without being mushy.

Aloo Gobi is normally served accompanied by Indian breads, rice, salads, chutneys or yoghurt.
