Description:
Hokkien Mee, also commonly called Fried Prawn Mee, is a Hokkien dish that has many variations around Southeast Asia. In Singapore, Hokkien Mee refers to a dish of yellow egg noodles and thin rice vermicelli noodles (Bee Hoon), fried together with prawn stock, oil / lard, garlic, fish sauce and eggs.


A good Hokkien Mee depends on the prawn stock, which is made from prawn shells, shallots, garlic, water and pork lard. Better quality prawns result in a tastier stock.

When fried together, the amount of stock used will determine how wet or dry the gravy of the resulting Hokkien Mee is. The gravy should be sufficient to coat each strand of noodle.

So, Hokkien Mee gravy could be totally dry, thin and wet, or thick and gooey.

The other key to a good Hokkien Mee is the skill of the hawker. They have to add the ingredients at exactly the right time and have a good mastery of temperature and fire control of his wok (Wok Hei - Breath of the Wok).

Hokkien Mee is served garnished with prawns, fish cake, squid, sliced pork belly, bean sprouts, spring onions, fried pork lard and a slice of lime. It is accompanied by a spicy chili paste (Sambal), and sliced red chili.

Some hawkers also include sliced chicken, chinese broccoli (Kai-Lan) or lean pork slices.

Sometimes, Hokkien Mee is served in a betel nut (Opeh) leaf, which imparts an additional fragrance to the dish.

Some people prefer their Hokkien Mee totally dry, some like it wet with gravy, and still others like it gooey. I prefer my Hokkien Mee with some gravy, but not too thin or gooey.
