Description:
Mee Siam orginated in Thailand, and was subsequently adopted by the Peranakan culture. As a result, Mee Siam in Singapore can be found at both Malay and Chinese stalls.
Mee Siam consists of thin rice vermicelli noodles (Bee Hoon) in a thin, sour and spicy gravy. Mee Siam is usually garnished with bean sprouts, fried tofu puffs, fried shallots, chives and lime.
Some hawkers also include a hard boiled egg.
The thin, sour and spicy gravy for Mee Siam is made with water, fermented soy beans, dried shrimp, chili, garlic and tamarind paste.
A good Mee Siam will have gravy that is thin, flavourful and not too watery. It should have a hint of both sourness and sweetness.
