Description:
Mutton Mysore is named after the city of Mysore, in Karnataka, South India. Traditionally, it consists of cubes of mutton in a dry curry paste, although the wet curry gravy version is more popular in Singapore.

The mutton in Mutton Mysore is first chopped into small cubes, and boiled together with ginger, garlic and salt until tender.

To make the dry curry paste for Mutton Mysore, a little bit of the mutton stock is fried with oil, powdered coriander, powdered turmeric, fennel seeds, chili, cardamom, cinnamon sticks, cloves, star anise, fenugreek seeds, curry leaves, cumin, onions, chopped tomatoes, curry powder and shallots.

This combination is then combined with the boiled mutton cubes and fried till dry and well-mixed.

This dry curry version of Mutton Mysore is usually garnished with toasted cashew nuts, pepper and coriander leaves. The mutton should be tender, and well coated with the spices, enhancing its flavour. It should not be drowning in oil.

The wet version of Mutton Mysore simply uses more mutton stock. The mutton should still be tender, and the wet curry gravy should be thick and flavouful, but not gooey.

Mutton Mysore is often served accompanied by Indian breads or rice, and yoghurt.
