Description:
Mutton Rogan Josh originated from the ancient Mughal Empire, who introduced the dish to the Kashmiri Pandits of Kashmir. The region today straddles the borders of North India and Pakistan.

Mutton Rogan Josh consists of either cubes of mutton, lamb shoulder, lamb leg, or lamb shank, cooked in mustard oil / canola oil / clarified butter (Ghee), under intense heat.

The dish is traditionally red / reddish in colour, which comes from powdered kashmiri chili.

Other ingredients traditionally used to make the curry for Mutton Rogan Josh include alkanet / dyers' bugloss (Alkanna Tinctoria / Ratan Jot), yoghurt, cloves, cinnamon sticks, cardamom, pepper, salt, powdered ginger, cumin seeds, powdered asafoetida / asafetida, powdered fennel, and garam masala.

Numerous other versions may include other ingredients including onions, bay leaves, powdered turmeric, milk, powdered nutmeg, mace, saffron, coriander, garlic or cassia bark.

Some versions use tomatoes or paprika to achieve the signature red / reddish colour in the curry.

A well prepared Mutton Rogan Josh should have tender meat, with a mild, but not overly spicy heat from the curry. There should not be too much excess oil in the curry.

Mutton Rogan Josh is normally served accompanied by Indian breads or rice.
