Description:
Mee Rebus means 'Boiled Noodles', and it is a Malay dish consisting of boiled yellow egg noodles in a thick, sweet and slightly spicy gravy.

The thick, sweet and slightly spicy gravy for Mee Rebus is made with water, mashed potatoes / mashed sweet potatoes, fermented soy beans, curry powder, dried shrimp, chicken stock, peanuts and tamarind paste.

Mee Rebus is usually garnished with a hard boiled egg, chinese firm dry tofu, bean sprouts, fried shallots, chili, lime and chinese celery. Some hawkers also include beef, mutton or dark soy sauce.

A good Mee Rebus will have gravy that is thick, but not gooey, and enough to coat the noodles evenly. Adding lime will enhance the taste and impart a burst of freshness.
